Bean,& Vegetable Salad with Crab meat


On a hot summer day a cold salad will give you much more relief than a hot meal. So simple to make. It takes less than 10minutes. Really yummy.  I am a bit lazy to cook after work so I like to try simple methods always. I assemble all these to make a nice healthy and also tasty salads like this. I never get a complaint. My kids love this salad.

When you do a salad you don’t need to stick on to a recipe. Get the idea and create your own. Instead of using canned beans you can boil them when you have time and leave the beans in fridge. You can leave up to 3 days in the fridge.  I used to boil mung beans, chick peas, barley, cannellini beans and kidney beans when I have time. Some times I make salad only with the beans. To tell the truth I like to use the canned beans as they are so easy and enough for serving size too. I buy in bulk and leave in pantry. They are so handy to have.


  • 1 can butter beans
  • 1 can black beans
  • 3 Tomatoes
  • 1 can crab meat
  • Several spring onions (scallion) sliced
  • 1 clove garlic
  • 1 salad onion finely sliced
  • 1 can crab meat
  • 1 apple
  • Pickled chillies
  • Salt and pepper
  • 1/2 of a lemon squeezed
  • 2 Tbsp. sour cream


  1. Drain the beans well.
  2. Slice or chop tomato, onion, spring onion and the apple.
  3. Crush the garlic and chop very finely.
  4. Drain the water from the crab meat or use fresh crab meat for a better taste.
  5. Add all in to salad bowl. Mix well. Add salt and pepper to your taste.
  6. Squeeze the lemon and Put the sour cream.
  7. Mix well.
