Oven Baked Salmon Patties

Salmon patties are one of my favourites. When we were in SriLanka we had the same with fresh tuna. My mum made them  small like the size of a plum. Coated the same way. I did the same here for the salmon. When you dip patties in eggs its really thin and always breakable and also looks bad too. But when you dip the patties in flour and water mix it helps to hold the shape and also give s a nice crust. This nice crunchy patties tastes better too.

The patties can be cooked in several ways. I prefer to use oven when I need a rest after. Deep fried patties are the best in taste. They are more crunchier too. You can pan fry them too. What ever the way you prefer it tastes nice and look nicer too. When you use panko crumbs it gives the nice crunch and a look to the patties. Serve them hot with a side salad or steamed fresh veggies.

Bon Appetit!

Cut or slice some onions, several cloves of garlic and curry leaves or parsley. (Make sure to cut Finely)

You need 1/2 tsp Pepper, Paprika, cumin powder and coriander powder with salt. Salt always according to your taste.

I used one can pink salmon. I always clean the skin. Take off the bones.

Boil the potatoes , strain and remove the skins.

Add about a tablespoon full oil in to a pan. Wait until the oil is very hot.

Add the sliced onions , garlic, herbs in to the hot oil and stir fry in hot oil.

Add the spices to the onions. Stir well and cook about 2-3 minutes.

This way it releases the aroma.

squeeze lime or lemon juice. If you like can add zest too.

Add the salmon.

Stir the salmon on a high heat until no liquid left at all

After add the potatoes. I normally crush the potatoes.

When there are pieces of potatoes in patties it look nicer and when you eat you its nice to to have chunks than mashed potatoes.

You will need flour to coat the patties

I am using panko crumbs. They cook nice and golden in the oven.

With out doing the egg wash I use flour, salt and turmeric powder. I used 5 table spoon flour with a pinch of turmeric powder and salt.

Add about 375 ml water.

Stir well. It shouldn’t be very thick or thin.

Put the patties in flour.

Coat well.

Dip the patties in the flour mix.

Coat the crumbs well.

Lay them on a baking tray. Spray the oil well.

Bake 0n 200c Preheated oven about 1/2 an hour. Serve with tomato sauce.
