Take 1/2 cup to 1 cup rice . (This serves 4)

Wash the rice throughly. add about 2 cups of water and cook on a low heat until it is mushy.

Wash the gotukola/penny wort throughly several times under running water.

Prepare things you want. Salt can be added to rice if you like. Always add less salt and taste after cooking and then add if necessary. You will need salt, about 250ml thick coconut milk and a blender. If you are using fresh coconut add the coconut directly to the blender with the gotukola.

Cut the gotukola before adding to the blender. It can tangle around the blades if you add with out cutting.

Add about 2 cups water and blend until very soft.

After it will look like this. Pass it through a fine sieve. That way there will be no pieces in the porridge.

This is the cooked rice after. Its ready to add the gotukola juice.

So now we have added gotukola and coconut milk. Stir well and put on the stove.

Stir well while cooking. Once boiled take out. Don’t over cook the gotukola as it can reduce the nutritional values.
