Clean the beetroot well and wash throughly

Cut the  beetroot. I always cut in to matchsticks. Then it absorb all the flavours well.

Add sliced onion and chillies.

Adding fenugreek seeds gives a nice flavour and medicinal values too.

Add chili powder. I add a bit more to beet root as it can be more sweeter. If you like a sweet curry add less.

Add about 1/2 tsp curry powder.

Add 1 1/2 cups of water. Put it on the stove. cover.

Add a cup of coconut milk and cook until slightly thick and not much gravy left. Dont cover after.
