My mother in law is a good cook. She cooks the bitter gourd in a very different way. She never uses coconut milk in her bitter guord curry. This a copy cat of her recipe.
This recipe will serve 4-5 people.
This is about 300g bitter melon. Wash and cut the melon. I normally remove the seeds.
Prepare the ingredients for the curry. I used 1/2 of an onion chopped, with a teaspoon full garlic finely chopped. Split some chillies. Other than that I used cinnamon, Pandan leaves, curry leaves and about a table spoon maldive fish flakes. if you are a vegetarian omit the Maldive fish flakes.
I used 2 large tomatoes . Cut the tomatoes in to chunks. Instead you can use goraka or tamarind. but the tomatoes gives a nice colour as well as sweetness and sourness too.
I added 1/2 Tsp chilli powder, pinch of turmeric powder and 1/2 tsp curry powder.
Add about a tablespoon full oil in to a pan and leave it to be hot.
Add the spices in to it. Fry few seconds on a low heat.
Add all the othe ringredients in to it with enough salt to your taste.
Add enough water to cook. cover and cook on a low flame until tender and the gravy is thick.
Serve with rice.
