Canned Mackerel can be cooked in several ways. Its a tasty fish curry. I cooked it with out coconut milk. It comes as a nice curry to go with bread , flat breads or even with rice.

This recipe is for one canned Mackerel. Open the can and take the fish out in to a bowl. Break the fish in half and take the bones out. I used the liquid in the can to cook this.

Cut severalcloves of garlic, onion and prepare curry leaves, Pandan leaves (Rampe) and several inches cinnamon, with one tomato or tamarind.

Prepare the spices 1/2 tsp pepper, 1/4 tsp turmeric powder, with 1 Tablespoon full chillie powder.

Add some oil in to a pan. Bring the oil toa high heat.

Add garlic, inion, curry leaves cinnamon, pandan leaves and curry leaves in to the hot oil.

Add all the spices in to the onion mix.

Stir fry well several minutes. Add enough salt.

Then add the mackerel with the juices from the can.

Mix well. and cook several minutes with out stirring.

After add 1/2 cup of water.

Cook until the liquid is thick.
