Cashew Curry Wash some raw cashews throughly and soak about 1/2 an hour to one hour. This is for 500g Cashews. Cut onions, fresh chillies, garlic and prepare curry leaves and Rampe (pandan Leaves) You will need 1 tsp curry powder,pich of chilli powder (Optional),1/2 tsp turmeric powder,2 inch piece cinnamon,1/2 tsp fenugreek seeds, and enough salt to your taste. In to the soaked cashews add the prepared onion, chilli, cinnamon, garlic, curry leaves and pandan leaves and add 11/2cups of water. Put it on the stove and bring it to the boil. After lower the heat and cook until lightly soft. Then add the spices and cook for another 2 minutes. Add 1 cup of thick coconut milk in to the cashews and cook several minutes. Cook it comes to the gravy is thick. Serve with plain rice, fried rice, , yellow rice or even ghee rice.
