Crazy Dough Bread

Crazy dough bread is for those who doesn’t want to do bread for kneading longer.  Crazy dough is for those who are not willing to bother about making a proper bread. That’s my honest idea. 🙂  Its so simple and easy to make. The bread is a bit heavy than normal bread. But really worth to know this in case of emergency when you run out of bread.

Those who want to make these beauties from plain flour add the same amount of flour with two teaspoon full baking powder. This bread comes out nice and fluffy and also in several minutes.

Add your own creativity to make this in different ways and enjoy making them.

Homemade Bakers Rolls from Scratch

Bread rolls are so easy to make with different styles of dough. I made these beautiful bread rolls from a recipe one of my friends passed to me from her grand mothers. Its so nice and beautiful in texture as well as stays in fridge for longer than a normal bread roll.

As I always says make sure to knead well and let the bread dough rest well for a better results.

Jam Splits

This recipe is for a small quantity of Jam splits. These buns are so simple and easy to make as well as nicer in taste as well as the texture. These can be kept in fridge for several days and can freeze several months too. When you use jam for this make sure to use a good quality jam.

Chocolate Balls

This is a copy cat recipe of a small snack size bun I found in a cafe. the oozing chocolate made this bun so tasty and a good combination for  a hot cup of coffee.

The bread is so simple and easy to make as well as very soft in texture too. Use a good quality chocolate in the middle.

Chicken And Leek Savoury Bread.

Chicken and leek bread rolls are a soft and moist bread that you can keep for 3 days in fridge or freeze in sandwich bags. So simple and easy to make too. As I always do baking I got more than 100 requests to do something savoury and this is for all who requested and like doing baking.

As this comes as a bread but divided too this saves time of making individual buns. I love to do baking but these days its winter in Australia and it takes too long to prove. But I can’t say no to those who asked me to do something different. You can save this as a finger food too for a party.

Recipe ingredients.

For the filling

  • 1 smoked chicken breast
  • 2 eggs
  • 1 leek finely sliced
  • 1 block cream cheese
  • 1 onion finely sliced

For the dough

  • 600g Bread flour
  • 10g Instant dry yeast
  • 10g Sugar
  • 50g Butter
  • 50ml Whipping cream
  • 1 tsp Baking Powder
  • 5g Salt
  • 200ml water

Method

  1. Whisk the eggs and pepper and add in to the cream cheese. Mix other ingredients and mix well. If you like to any other thing to the mix add anything as you wish. Leave in Fridge until finish with the dough.
  2. Add the flour, in to the mixing bowl and mix with sugar, salt and yeast.
  3. After adding the whipping cream and water mix well. After knead about 15 minutes until not sticking to the bowl. Put the prepared dough in to a bowl and leave in a warm place to double in size.
  4. When the dough is doubled in size put the dough on to the bench and cut in to two equal parts.
  5. Roll each part to a rectangular shape and spread the dough on each dough to cover the whole dough.
  6. Roll the dough to a log and cut as directed in the video.
  7. Leave again to double in size.
  8. Brush the dough with some eggs and sprinkle some sesame seeds on top. Bake on 180c about 30 minutes or until golden brown on top.

 

Yoghurt Dinner Rolls

When baking bread the whole house is full of smell like when you walk near a bakery. It refreshes everyones hunger. Kids are eagerly waiting to have a hot bread roll with butter. I cant stop eating the freshly baked hot bread.

Baking bread is very simple and easy. The only thing is getting it to the right consistency. Kneading the dough is the secret of making good bread.

When adding yoghurt and milk in bread it will make the dough softer. The size of the egg that you are using to make the bread makes a bit wet too. So adding extra flour until you reach the right consistency is not a problem at all. So feel free to add extra flour to make it happen.

Ingredients

  • 115g bread flour
  • 70g Butter
  • 1 whole Egg
  • 3g Salt
  • 10g Sugar
  • 7g  Instant dry yeast
  • 75ml Milk
  • 120g Yoghurt

Method

  • Add bread flour in to a mixing bowl.
  • Into that add sugar, yeast, egg, yoghurt, and salt and mix well.
  • Add the milk and keep on kneading about 5 minutes. (Make sure to add the milk bit by bit as it can go soggy. If that happen add extra flour)
  • After add the butter and keep on kneading another 15 minutes.
  • Leave it in a warm place to double in size.
  • When the dough is doubled in size , punch the dough down and put on to floured surface. Make sure to knead adding more flour until it comes to a dough that not sticking any more.
  • Cut the dough in to equal size pieces and make balls as described in the video and leave in a small baking tray. (I used 6x6inch baking dish).Leave in a warm place to double in size.
  • When it is double in size  brush the tops of the buns with eggs or milk and bake on 180c about 15-20minutes.
  • Cool on a wire rack or serve hot.

 

 

 

 

Baked Asian Style Pork Buns

This is a baked bun instead of the steamed. The Chinese BBQ pork buns are very popular. This version is the same but I baked it. The buns are very soft and moist and also like cotton. So nice and simple to make. I do not eat pork much. To do this recipe I used pork as I got so many requests. I boiled the pork for easy cooking. If you are not a pork lover you can use chicken or any other kind of a meat with the same dough mixture.

Ingredients

  • 420g Bread flour
  • 200-220 ml warm water
  • 5g Salt
  • 1 Egg
  • 10g Instant Yeast
  • 10g Sugar
  • 500g pork cooked pork
  • 1 Tbsps. Flour
  • Garlic and ginger sliced
  • 1/2 of an onion
  • 1 Tbsp. Soy Sauce
  • 1 Tbsp. oil
  • 2 Tbsp. oyster sauce
  • 1 Tbsp. sesame oil

 

Method

  • Add all the ingredients except water, butter and mix well. Add water bit by bit and make a smooth dough. (The water level always depends on the size of the egg and the water you add to the yeast mix)Then add butter and knead about 10-15 minutes.
  • After leave in a warm place to double in size.
  • Mean while cook the pork.
  • Add about a table spoon full oil in to a pan. In to that add garlic ginger and onion and cook until soft.
  • Add sesame oil , oyster sauce, soy sauce and cook one minute until it thickens.
  • Next add flour and stir well. Add the pork and cook well. Leave it to cool down.
  • When the dough is ready knead the dough well  & divide the dough in to equal size pieces .
  • After flatten each dough piece in to a round  and put the meat in the middle and seal ends and using the palm with out giving pressure roll it on the bench.
  • Put them on a baking tray to double in size.
  • When doubled in size brush the tops with eggs sprinkle some sesame seeds on top and bake them on 180c about 20 min or until golden on top.
  • Cool on a wire rack.

Vegetarian Curry Buns / Tanzhong or water roux method

Curry buns are simple to make. The texture of these buns are very soft. The tangzhong makes the buns very soft. Even if you keep them several days in fridge it will not go hard.The belief of the tangzhong is to keep the roux in fridge more than 12 hours in fridge. I always use it even while it is warm. It works like a magic.

In here I use eggs for the brushing by a mistake. As I am always using the egg mix I automatically did it. If you are a vegetarian try using milk or cream. Vegans can adjust this by omitting butter and adding coconut oil. i will do fully vegan soon.

When you cook the vegetables make sure to cook it until no liquid. This way it keep the buns well seal and no liquid comes out. I will share a tip here. When you want to make the curries dry try adding a table spoon or two plain flour to the curry at last. cook a minute stirring. It will thicken the curry quickly.

When you make the curry you don’t need to stick on to the same vegetables. You can use what ever you have in fridge. My curry is a bit Sri Lankan ????????. The coconut milk gives a nice creaminess to the curry. That way when you have a bite of the bun you will feel the taste of a creamy coconut in the curry.

Ingredients

For the Curry

  • 1 large potato diced
  • 2 Carrots diced
  • Half of a cabbage
  • 1 leek  sliced
  • Several curry leaves (optional)
  • Pandan leaves (Optional)
  • 2 inch cinnamon
  • Sliced whole onion
  • Several green chillies (optional)
  • Several garlic cloves chopped
  • 1 cup thick coconut milk
  • 2 vegetable  stock cubes
  • 1 Tsp curry powder
  • 1/2 tsp Pepper
  • 1/2 Tsp Turmeric powder

 

For the Tangzhong

  • 100g Bread flour
  • 150ml cold water

For the Buns

  • 500 g Bread flour
  • 10g Instant dry yeast
  • 1tsp Sugar
  • 5g Salt
  • 150ml water
  • 40g Softened Butter
  • The roux (Tangzhong)

Method

 

  1. Add oil in to a pan.
  • When the oil is hot add curry leaves, Pandan leaves, cinnamon, onion and the garlic. Fry two minutes in oil to get the aroma release..
  • After ad all the veggies except the leeks and sautĂ© it several minutes.
  • Add all the spices with the stock.
  • Add leeks next  and cook several minutes.
  • Lastly add the coconut milk and cook on a low heat until no liquid. (Read description to get the tips)
  • Leave the curry to cool down.
  • Make the tangzhong by adding 100 flour and 150ml cold water in a pot. Mix well & Cook until thick. Leave to cool.

 

  1. Add the bread flour, salt sugar yeast, and butter mix well.
  2. While mixing add water.& make sure to add little by little.
  3. Let it knead and rise in the machine or Knead well and leave in a warm place to double in size.
  4. Take the dough when ready and punch down and knead on a benchtop.
  5. After roll the dough and cut the dough in to equal size pieces.
  6. Roll each piece and leave to on the bench ten minutes to rest.
  7. Roll the each pieces in to a circle and put the filling in the middle. Seal ends well.
  8. Leave on a baking tray to double in size.
  9. When it is doubled brush with eggs or milk and bake 20-30 minutes or until golden brown.
  10. Cool completely on a wire rack.

Baked doughnuts from Scratch

Doughnuts are always kids special. As mums we worry a lot giving fried food to the kids .Try this baked doughnut recipe and you will be amazed to see the results. They are better than the shop bought ones in shape, look and also the taste. You can do a larger batch and leave in freezer for future use. If you can cut them in to smaller circles that will be the best.

Adding sugar is the next thing. If you like it more or less you can always adjust it according to the taste.

When you want to check your yeast this method is the best. I am a continuous user of my yeast. If you are not baking bread always needs to check the yeast this way. When you add water to the dough make sure to add less as the egg and the water in yeast is there too.

Ingredients

  • 350g Bread flour
  • 9g Instant dry yeast
  • 1tblsp Sugar
  • 2 Tbsps. Warm water
  • 1 Egg
  • 100g Sugar
  • 5g Salt
  • 100ml Milk
  • 30g Softened Butter

Method

  1. Add the sugar warm water and yeast in to a mixing bowl and leave five minutes to activate.(Read the description.)
  2. Add the bread flour, salt sugar yeast, and mix well.
  3. While mixing add egg and milk. When you add milk make sure to add little by little.
  4. Knead well and leave in a warm place to double in size.
  5. Take the dough when ready and punch down and knead on a benchtop.
  6. After roll the dough and cut the doughnuts.
  7. Leave on a baking tray to double in size.
  8. When it is doubled brush with milk and bake 10-15 minutes or until golden brown.
  9. Cool completely on a wire rack.
  10. Melt the chocolates according to the packet instructions . Dip the doughnuts in  chocolate, leave on a wire rack  to set.
  11. Can freeze for several months too.
