Simple Potato Pancakes for breakfast

I love potatoes. When comes to potatoes I will make anything with them. These beautiful and crunchy pancakes are a hit if you serve as a finger food or even as a side. making the pancake is so simple and easy.

You can add spring onions or even leeks for color and more taste.  Add more flavours by adding some stock powder and bacon or any other meat to make it a full meal.

Every time I make them it flies away from the plate leaving nothing for me. ūüôā . The dipping sauce can be different from mine. If you are a vegetarian try not using fish sauce. I like it with out any dipping sauce.

To give a colourful look you can add grated sweet potatoes in it too.

  • 4 large potatoes
  • 1 large onion
  • 1/2 cup flour
  • 1 tablespoon oil
  • salt and pepper

  1. Grate onion and potatoes.
  2. add salt and pepper
  3. add flour bit by bit as you will not need the lot.
  4. mix and pan fry it until golden brown on both sides.

Eggplant Fried Rice (Simple Meals)

Eggplant fried rice is a simple but elegant  meal that anyone can try in few minutes. Its a one pot meal that can be cooked in few minutes. Adding all the vegetables  with nuts makes it a  complete meal. Add the vegetables to your choice.

I try to do more vegetarian and vegan friendly. If you are a person who needs meat for every meal try doing something like this at least a day for the week and you will be amazed to how tasty these meals are.

Adding variety to your meals take you out from eating the same meals. The fried eggplants are so yummy. When you fry the eggplants make sure to soak them in salt water with a bit of  turmeric. It will keep the eggplants  away from browning and also takes the liquids out from eggplants.If you consider about oil in your meals try grilling the eggplants but fried is the best.

I do a lot of gardening in my spare time and these beautiful eggplants are directly from my garden.  I will write more about easy organic gardening soon on my bog.

Eggplant Fried Rice (Simple Meals)

  • 4 Cups Cooked Rice
  • 1 tsp fennel and 1 tsp cumin seeds
  • 1/2 cup to 1 cup almond seeds
  • 1/4 cup coconut sugar
  • 2 cups fried or grilled eggplants
  • 1/2 cup grated carrots
  • 1/2 cup coriander leaves
  • 2 tsp ginger and garlic paste.
  • several red chillies chopped
  • 4 spring onions chopped
  • 1/4 cup tamarind juice.
  • Coconut oil for stirfrying
  1. Deep fry or grill the eggplants until golden brown.
  2. Prepare 4 cups of rice. (I used 1 cup rice for each person)
  3. Prepare all the vegetables and nuts as needed.
  4. Put some oil in a pan.
  5. Stir fry ginger and garlic.
  6. Add almonds and fry until golden.
  7. Stir fry veggies and rice.
  8. Add tamarind juice and coconut sugar and mix well.
  9. Add enough salt to your taste.

Loaded Vegetable Patties

First of all I must say ,this is a vegan and vegetarian friendly recipe. I always do my way of vegetable patties for the kids. It saves money and we exactly know whats in it. Doing vegetable patties are so simple and easy.Every time I buy them from the super Market I feel its more floury than homemade vegetable patties.  When you do them at home you can always add anything as you wish. The sky is the limit.

I always add seasonal vegetables in my burger patties. One thing is its cheaper to buy the seasonal vegetables and also they are fresh. Adding more vegetables in patties makes it rich as well as tasty. If you are gluten free try using mashed potatoes as the binder instead of flour.

  • 2 Grated Potatoes
  • 1 leek finely sliced
  • several chillies chopped (Optional)
  • 1/2 cup of fresh chopped parsley
  • 2 grated carrots
  • several beans chopped
  • 1 zucchini grated and squeezed
  • 2 cups of finely sliced cabbage leaves
  • 1 grated onion
  • 1 large or several small eggplant/brinjal
  • 1 large sweet potato grated
  • 1 cup plain flour
  • 1 tsp fennel seeds
  • 1 tsp cumin seeds
  • 1/2 table soon basil and 1 tsp dill
  • 1 tablespoon garlic powder
  • 1 table spoon full stock powder
  • Salt and pepper to your taste
  • Coconut oil
  1. Mix all the chopped ingredients in a large bowl.
  2. Make patties as directed in video.
  3. Pan fry them several minutes on both sides.

Sushi Sandwiches

My daughter prefers Sushi sandwiches  every time she buy sushi. So she  she requested me to make these  these beautiful sandwiches. But in shops They are so nicely made with different outer layers. I know the prices are high due to the  labour cost,  for making them too. So I thought I will do them at home for her with one tasty filling.

I used 500 g sushi rice for this. I cooked sushi rice with the sushi  seasoning  and I added wasabi in the rice after cooking.  When you  make a larger batch so simple to please kids for several meals.

Step by step clear instructions are below with the pictures.

For this recipe I used a cup of grated pickled zucchini, 2 cups carrots, 1/4 cup sesame seeds (Both black and white)

Other than that I used one can tuna (Make sure to squeeze  the excess water out)

Mix all together.

I used 1/4 cup of mayonnaise , 2 table spoon full pickled cucumber paste and a 1/2 tsp pepper.

Cook the sushi rice according to the packet instructions. I am using 500 g rice.

Mix everything together.

Leave it aside.

Lay the Nori sheets  on the bench.

Put a a spoon full of cooked rice on it.

Lay the rice on the paper as shown in the picture.

Spread the mix evenly as shown in the picture.

Put both on each other leaving the Nori sheet up.

Press well and cut in to four and then in to triangles.

Serve with soy sauce.

The left over rice can be kept in fridge and use with in a day.


Sushi Sandwiches My Way....

  • 500g Sushi rice
  • 1/4 cup sushi seasoning
  • 2 cups shredded carrots
  • 1 cup grated pickles cucumber
  • 1 can tuna
  • 1/4 cup black and white sesame seeds
  • 1/4 cup mayonaise
  • salt and pepper
  • 2 table spoons cumber spread
  • 1 packet Nori sheets
  1. Cook the rice with sushi seasoning as to the packet instructions.
  2. Mix all the vegetables with tuna and leave aside.
  3. Spread the rice on the Nori sheets .
  4. Then spread the vegetable and tuna mix on rice and cover with another sushi sheet with rice on top. Press and cut in to triangles.
  5. Serve with soy sauce.


Homemade French Fries

French fries, or potato chips tempt our taste buds, and you can easily get addict to them. The crispy out and the soft middle gives the nice crunch and the creamier taste from the first bite. Its so simple to make at home. When ever you have time you can prep your own fries and leave in freezer to fry them.

I love the chips. The only reason  I like to do them at home  is the oil they fry.  It get changed hardly in commercial places. they clean the oil but they reuse the burnt oil again and again. As a chef I have experienced it and they use cotton seed oil most of the time as its cheaper to use and also it can reach to high temperatures..  Its not the chips make health issues but the oil.

If your kids are loving chips and still you want to do something for them try this way and leave in freezer until you want them. Shop bought ones already contains oil. So its worth trying at home. So this way you know that you are eating something better than the commercial ones.

When cutting potatoes try cutting them thin or thick or as you wish. This way you can do sweet potatoes too.

Homemade French Fries

  • 4 Potatoes
  • Salt
  • Oil for Frying
  1. Cut the potatoes using a cutter or in to strips.
  2. Add salt in to a bowl of water
  3. Put the potatoes in to water
  4. Leave in fridge 2-3 hours.
  5. Boil the potatoes until it reaches to the boil and cook one more minute.
  6. Drain.
  7. wash under cold tap water or put in ice water and drain again. Leave on paper towels to dry.
  8. Put on a tray and leave in freezer.
  9. After 2-3 hours and its completely frozen fry in hot oil until golden brown.
  10. Add salt and serve hot.


Devilled Chicken

Devilled chicken is a spicy but really elegant , popular dish in Sri Lanka¬† served¬† with¬† fried rice. When you serve this you don’t need to serve anything else as this contains vegetables too.

The spicy and tangy flavours of this dish makes it so special. You will find the devilled chicken  in any restaurant in Sri Lanka. If you dislike spicy food you can try with paprika and taste  & the look will be the same.

Always try this recipe with chicken with bones. I like to use the chicken thighs as it contains a lot of flavours.

This is about 500 g chicken. I used chicken thighs for this recipe.

I used a teaspoon full chilli powder, 1/4 tsp pepper, enough salt to the taste,and a 1/4 tsp turmeric powder.
I used a 1/4 cup of vinegar to marinate the chicken.
Add all the spices and vinegar to the chicken and marinate overnight in fridge or 1/2 an hour on the bench top.
Later Put a pan with oil on the stove and fry the chicken.
After frying it will look like this.
You will need some sliced onions, sliced carrots, sliced yellow capsicums, sliced leeks, and tomato wedges.
Later, add some oil in to a pan and fry ginger and garlic paste. 
Add the vegetables and fry slightly.

Next add the spice powders on to the vegetables. Stir fry with the spices about a minute.

After add about 1/4 cup of tomato sauce tomato sauce with a tablespoon full oyster sauce.
Next add the chicken and stir fry well.

Serve with rice.  

Devilled Chicken

  • 500 g chicken thighs cut in to chunks
  • 1 tsp chilli powder
  • 1/2 tsp pepper
  • Salt to your taste
  • 1/4 cup vinegar
  • 1 tsp ginger garlic paste.
  • 1/4 tsp turmeric powder
  • oil for frying the chicken and stirfrying
  • 1/4 cup tomato sauce
  • 1 table spoon full oyster sauce
  • 2 carrots sliced
  • 1 leek sliced
  • 2 onions sliced
  • 3 yellow peppers sliced
  1. Add all the spices and vinegar on to the chicken and marinate it.
  2. After fry in oil and leave to drain.
  3. Meanwhile heat oil in a pan and add ginger garlic paste. stir well.
  4. Add the vegetables and stir again.
  5. Add the sauces.
  6. Next add the chicken and stir well.
  7. Serve with rice.

Asian Style oven baked whole fish

I bake fish in oven quite often. This is one way of doing it. The more the flavours  the more goes through the fish. It helps to take smell out from the fish and even those who dislike  fish will eat this way.

Buy a good soft fleshy fish for this. I am using a Baramundi and it weighs about 900 g. Take the fish and descale the fish well. Take all the fins off too. Clean the guts and the gills. Wash inside and out thoroughly.

If you can leave the marinated fish over night in fridge is the best. So all the flavours absorb in to the flesh of the fish and make it more tastier than baking it at once. When baking make sure not to burn the fish.

This recipe will serve 4 people.

Leave the fish on the chopping board and descale and remove guts and the gills.

Cut across the fish as shown in the picture. It helps the marination goes through every corner.

I used juice of one large lemon, salt and pepper, garlic powder, oil, crushed chillies,and soy sauce for this.

Add all the ingredients in to a small bowl and mix well.

Put everything on to the fish. Rub the spice mix all over the fish.

Line a baking tray with baking paper and and put the fish on and leave to marinate.


Bake on 180 c about 30 minutes. (Baking time will vary from size of the fish)

After baking the fish prepare the ingredients needed for the garnishing. I used several finely sliced chillies, onions and garlic with with some curry leaves. Fry the above ingredients in a table spoon full coconut oil and pour over the to fish.

This will give a nice zing as well as flavours to the fish.


Asian Style oven baked fish

  • 1 table spoon soy sauce
  • 1 table spoon chilli paste
  • 1 tea spoon full garlic powder
  • 1 tablespoon full oil
  • 1/2 tsp pepper
  • enough salt to your taste
  • juice of one lemon
  • For tempering
  • several red chillies chopped
  • curry leaves
  • 1 sliced onion
  • few cloves of chopped garlic
  • Coconut oil for frying
  1. Descale and clean the fish.
  2. Cut across.
  3. Mix the ingredients for the marination and spread on the fish. (Both Sides)
  4. Bake on 180 c about 1/2 an hour.
  5. Put some oil in a pan and fry all the tempering ingredients and pour over the fish.
  6. Serve with a nice salad.

Noodle wrapped in Omelette

Always I add eggs in to the omelette and thought of trying it in a different way. I found that my kids prefer this version of noodles than the other one. This is a bit spicy. If you do not like spicy foods try  with out chillies.

This mouth watering noodle dish helps to balances the amount you are eating as it is already portion controlled. When you make noodle only you feel like eating more. but this recipe is just to wrap the noodles in omelette.

This recipe will serve 4 people. I added 2 eggs for each person. The protein quantity in makes filling and you can adjust this with any vegetable as you wish.

  • 3 packs unflavoured Instant noodles
  • Grated carrots
  • sliced mushrooms
  • coriander leaves chopped.
  • chilli
  • 1 tsp shrimp paste
  • 1 tsp soy bean paste
  • 1 tsp garlic and ginger
  • 1 tsp crushed chillies
  • 2 eggs for each
  • 2-3 sliced green onions
  • grated carrots
  • sliced bell peppers
  1. Add some oil in to a pan and add the ginger garlic paste, crushed chillies, soybean paste, and the shrimp pate.
  2. Fry 1 minute.
  3. After add coriander and chopped chillies.
  4. After add the chopped vegetables.
  5. Later add the noodles.
  6. After leave aside and beat eggs and make the omelette.
  7. Add the noodles in to the middle. Wrap the noodles in the omelette and serve hot.

Honey Soy and Sesame Salmon

Honey soy and sesame salmon is my daughters favourite dish. Every time I make it she comes to say how nice it was. This is really simple to make and loaded with lots of flavour. All about the combination of sweet and sour.

For a busy day meal I do something like this. Its so simple to make and the family loves it. That’s all what I want. When you buy salmon make sure to buy the fresh ones. There is a huge difference of taste¬† from the frozen and fresh.

Most of the time I buy one whole fish  and fillet it by myself.  So the bones and the head can be used to make the fish stock.  Some times I use the fish heads and bones for my tomato plants. You will not believe how it works. It gives loads of tomatoes as the results.

Try doing this when you cook salmon next time.

Get a good fillet of salmon.

Season with salt and pepper.

Put a pan with some oil on the stove.

Place the skin side down and cook until crispy.


Then turn to the other side.

You will need soy sauce, one lime or lemon and 5 table spoons full honey  with several clove of garlic. Mix all together and blend it.


Pour the blended liquid over the fish.

Sprinkle sesame seeds on top and cook until it thickens.

Sprinkle some sesame seeds & spring onions  on top

     Serve with grilled vegetables or a salad.

  • Juice of a lime
  • 1/4 cup of water
  • 2 table spoons vinegar
  • salt and pepper
  • several cloves of garlic
  • 3 tablespoons soy sauce
  • Chopped spring onions
  • 2 tablespoons sesame seeds
  1. Season the salmon with salt and pepper.
  2. Grill or pan fry the salmon fillet on both sides.
  3. Blend soy, garlic, vinegar, honey with water and lime juice.
  4. Pour over the salmon and cook until it thickens.
  5. Sprinkle sesames seeds and spring onions.
  6. Serve hot with aside salad or grilled vegetables.
