When I was a kid fruit salad was one of the very famous desserts in Sri Lanka. Most of the time its done for special occasions only. With the globalisation everything has changed and now it has become a common everyday dessert.
When doing a fruit salad you can use any fruit that is available during the season. mainly, pawpaw, pineapple, mangoes as they are available throughout the year in Sri Lanka. If you are overseas you can use a lot of different types of fruits in a fruit salad. Other than that watermelon, grapes will add more colour.
The difference to other fruit salads is that most Sri Lankans including my mum add condensed milk on the fruit salad before serving. One reason was that time no fridges and also no critical illnesses .
Try the fruit salad at least once with a bit of condensed milk to see how tasty and elegant looking the fruit salad is.
I used one papaya or pawpaw. Peel and remove the seeds. Then cut in to chunks.
The same way peel and cut the flesh in to chunks.
Peel the pineapple and cut in to chunks. I used half only as the pineapple was huge. 🙂
Other than that I used a banana (Make sure to add banana when you are ready to serve , if not it can go brown and ruin the look of the fruit salad) . pear and apple and juice of two lemons. You can replace lemons with orange, mandarin or even limes.
Cut all the fruit in to chunks.
To give extra colour I added grapes and strawberries.
Put the salad in to serving bowls and top with condensed milk .

Have you ever tried the soft Asian style bread? For the money you buy one you can make several at home. These are very soft buns that you can even try with left over mashed potatoes. All you need is mashed potatoes with stir fried onions as the filling.
To make the buns more softer you can add bread improvers , but its not necessary if you knead the bread well.
Some ask me whether I have hidden secrets to get softer buns. I never keep any secrets. All you need to do is make them quite often. Then you become a well experienced baker. Not only they are home made but also it gives you the self satisfaction. I really enjoy baking and also love to share the correct recipes with others.
These cookies are so easy to make and this is a big batch. Divide the recipe by 2 to do a smaller batch .If you like you can add more roasted sesame seeds in to this recipe too. Adding more sesame gives these cookies a unique taste.
Sesame seeds are used in many Asian cooking and baking too. It has a nutty flavour and a crunchy texture too. Sesame used for making Tahini and halva and many other dishes. Sesame oil is used in Asian cooking too.
My mum used to make a nice sweet slice using a lot of sesame seeds. Not like these days when I was a child my mum had to separate sesame and throw the tiny stones mixed to it. When she sun dry them we use to grab a hand full of sesame and run away. They are from my childhood memories.
Cauliflower in a pancake batter makes a beautiful meal for a busy morning or a dinner. They are so simple to make. The meal will be ready less than 30 minutes. This is a budget recipe as well as a one pot meal. These beautiful pancakes can be left in fridge for 3 days and can freeze for future use. When you freeze make sure to store in individual bags.
Instead of using eggs you can add a banana or some flax meal too. So it will help to bind the ingredients together.
You can change the herbs always to liking.

Black rice is creamy in texture and nutty in flavour when cooked. I like black rice either as plain or even with coconut milk. You can serve this with a spicy dish with some spiced chilli sauce or even with fresh fruits like mangoes or pineapple.

You can get the black rice from organic section from your super market.
I am cooking about 2 cups of black rice.
Wash thoroughly and add water. How to cook black rice…..
Add salt to your taste. Cook until the rice is tender.
I used one can of coconut milk. (400 ml)
When the rice is tender add the coconut milk.
Cook until not much coconut milk left.
Serve hot or cold.
I make these pancakes at least once a week. You can serve this with any kind of a filling, a savoury or a sweet filling. These are really soft and I have added some pictures to show how soft they are.
The colour and the texture of these pancakes attract anyone who doesn’t like spinach. When you cook them make sure to cook them on a low flame for the brighter greenish colour.
To make the pancakes you will need 225 g plain flour, 85 g corn flour, 3 Eggs, 200 g spinach, salt to your taste, 30 g butter melted with 300 ml milk. You can always adjust the flour level to get the right consistency.
Add the spinach in to a food processor or a blender with milk and process until smooth in texture.
Once processed it will look like this.
After add the plain flour and corn flour in to the mixing bowl.
Next add the melted butter in to it.
After add the eggs in to the blender.
Process it until fully blended.
Put a pan on the stove .Add butter in to the hot pan.
Spread the butter evenly.
Add a ladle of the spinach mix on to the pan.
Turn the pan over to spread the mix or use the back of the spoon to spread it to circle.
Cook on both sides.
I put them on a wire rack . So that way they don’t stick together.
My hobby is baking and gardening . I love experimenting bread every weekend. Its spring here in Australia and that means I am baking bread again. In winter its hard to proof. But still I used the warm oven for proofing. So you can see more bread soon.
This bread sounds hard but very simple to make. Its worth putting the effort to bake this beautiful bread at least once. The bread is so light and soft. I prefer this just like the milk bread. So tasty with butter and jam. 🙂 Even you can use with savouries too.
This stays out two days with out a problem and also last about 4 days in fridge. Can freeze up to three months too. To get the softer crust add butter on top of the bread. Leave the bread covered with a clean tea towel about 5 minutes. You can get a glaze as well as a softer crust this way.
If you want to spoil yourself with more condensed milk add several spoons on to a slice of bread ………………. 😀 I did…..Yum…
Seasonal fruits and vegetables are best to use than buying other non seasonal fruits. Lemons are in season and its nice using them in cakes and cookies and slices , pies etc.. I did these beautiful cookies as my husband requested. They were so nice and yummy. My whole family loved them.
I like to use the lemon zest in cakes but not in cookies a lot. I used the juice of lemon in this to give extra tangy flavour to the cookies. Sprinkle some crystallised sugar on top to give an extra crunch to the cookies.
Strawberries are in season and really cheap too. Try doing different styles of baking with the seasonal fruit. This is a very simple dessert that you can do in half an hour if you have everything in hand. This will be a best idea for a quick dessert .
I did this for a friend who visited us recently. So simple but really elegant on the plate. Nice crunchy short cakes with beautiful fresh strawberries in the middle with the mascarpone cheese made this a tasty dessert to please them all.
The only thing you need to know when making this is not to bake the short cakes until brown. Then it will be hard to cut it well. So make sure to take them out when just ready.
