Cowpea or the black eyed gram is really good in making wade. They are rich and creamy when fried. Not vey strarchy too. Mostly people use chick pea or the split yellow beans for wade. But there was a time we had cowpea wade when we were little. The vendors who came to sell wade on trains used to use cowpea to make their wades.
This recipe will serve 8 people…….
This is 300 g black eyed grams. Soak them overnight .
Strain the black eyed gram and take the excess water out.
Put it in to a food processor and process slightly. There should be tiny pieces in it.
The consistency should be like this. Tranfer the cowpea in to a bowl.
Cut one large onion or several shallots finely and several red or green chillies finely.
Add the onion and chillies in to the cowpea with salt. You can add chopped curry leaves and rampe too.
Add some Maldive fish flakes if you are not a vegetarian.
Make oval shape balls out from that.
Put a pot on the stove with oil and add the wade in to the hot oil.
Deep fry well. Make sure not to turn at once.
Deep fry them until golden brown.
Drain excess oil on paper towels. Serve hot.
