Freshly cooked baby jackfruit is a most loved curry all over in Sri lanka. Its so nice with plain rice. baby jack fruit is cooked with all the spices and the coconut milk for a longer time on a low flame. When I vivsited Sri Lanka the trees were full of baby jack fruit. So I got a chance to cook one for you all.
Baby jack fruits can be cooked in different ways, Its better cooked on a low flame for a longer time . I still can remember the curry one of the fellow teachers used to cook overnight. Its so yummy the next day when slow cooked. All the flavours goes through and ,makes it so nice and delicious.
This recipe will serve 8-10 people.
Buy or get the jack fruit directly from the tree and cut in to two. Put the flat side down and take the skin out. After cut on to chunks.
The Spice powders you will nedd for this is about a tablespoon full roasted curry powder,1/2 table spoon unroasted curry powder, 1/2 tsp turmeric powder, fenugreek seeds, cinnamon.
Other than that you will need 1 whole garlic chopped, onions, cardamoms and clovessalt , curry leaves and rampe.
I used one whole coconut to get the coconut milk out.
Add goraka or tamarind to give sourness.
Add the chopped baby jackfruit in to the pot and add the coconut milk and cook until tender.
Cook until the gravy is thick
