Fried Eggplant Salad This is about 250g Egg plants. Cut the egg plant in to squares and then leave to soak in water . I add 1table spoon salt and 1 tsp turmeric powder in to the water. That way salt goes through the egg plants and water comes out. Squeeze the egg plants and add in to oil and fry until golden brown. Meanwhile prepare the salad ingredients. Cut 1 onion finely with some chillies. You can add any amount you wish. Next add about a teaspoon full maldive fish flakes and pepper. Next add salt. Squeeze half of a lime in to it. Mix well . Add one or several tomatoes in to it. Fried egg plants will look like this. Dont over fry. Then it will give a bitter taste. Make it just right. Always take the excess oil out. Add the eggplants in to the salad. Mix well using a spoon. Check salt and the sourness. If not enough add a bit more. Its ready. Serve with rice. Good with special rices too.
