Gotukola / Pennywort Curry Wash Gotukola under running water several times and strain water. Cut the washed Gotukola as fine as you can. Chop some onion and fresh chillies. In to that add 1/2 cup of very thick coconut milk. To make coocnut milk I use 3 table spoon full coconut milk powder in 1/2 cup of hot water. Bring to boil and simmer. Add salt. If you are not a vegetarian add some maldive fish flakes. Stir well and cook until like only 3 table spoon full liquid in the pot. Then add the cut gotukola in to the pot. Cook 2 minutes. The liquid in gotukola will give extra water to cook. Enjoy with plain rice.
