Green mango curry is a very popular dish among Sri Lankans when in season. Mangoes can be cooked in different ways. This is the way my mother in law cooks with out adding any coconut milk in it.
When you select mangoes for a curry like this make sure to buy well matured mangoes. Slightly ripe mangoes are sweeter in flavour. So buy the best mangoes for this recipe.

This recipe will serve 4 people. This mango weighs about 450 g . Cut the mango in to wedges. Open the mango seed and take the middle and throw it out.
Prepare the ingredients for the curry. One onion finely sliced, several green chillies slit in to two. several cloves of garlic finely chopped, several curry leaves and some pandan leaves, several inches of cinnamon and a 1/4 Tsp fenugreek seeds. Other than that 1-2 Table spoon full sugar, enough salt to your taste, and a teaspoon full red chilli powder. Add some oil in to a pan. ( I used coconut oil)
Add all the chopped onion, garlic, chillies, curry leaves, rampe, cinnamon in to the hot oil with the fenugreek seeds. Fry the chopped onions until translucent. After add the spice powders and fry several seconds.
After add the mangoes and cook with the spices about 2 minutes. Later add enough water to cover and cook on a low flame until the mangoes are really tender. Adjust the salt and the sugar to your taste.
Serve hot with rice, flat breads or bread.
