Beetroots area common vegetable in Sri Lanka. We cook it in different ways.I have already done one called beetroot .for lunch boxes. The other one is Beet root with potatoes. If you like to cook leaves separately try how to cook beetroot leaves. It tastes so nice.

This recipe is for 250g beetroot with about 150g beet root leaves. Get fresh beetroots with fresh leaves. Cut the head and seperate the Leaves. if you like to add the stems cut with the beetroot or discard them keeping the leaves. Always check the leaves well before washing. Discard all the rotten bits and pieces and wash well.
Cut the top and the bottom of the potato and peel it using a peeler or a small knife.
I always like the beetroot in to matchsticks. You can do it the way you like. i find that it absorb all the flavours well when cut tiny. Cut washed leaves roughly too.
Prepare onions and chillies sliced, cinnamon, curry leaves , fenugreek seeds and add them on to the beetroot.
Add about 1 1/2 cups of water. Add 1 tsp chillie powder, 1/2 tsp turmeric powder, and a 1/2 tsp curry powder. Mix well.
When the beetroot is well cooked add the beetroot leaves on to it and stir well.
After add a cup of very thick coconut milk and cook until the gravy is very thick. Beetroot is not nice with a lot of gravy.
