Kale / Athu Gowa with Coconut (Mallum) Kale is a Super food. You can find Athu gowa very similar to Kale in Sri Lanka. I really like that cooked with coconut. This is the way I do it and really simple and taste very nice too. If you like more Sri Lankan Recipes Click here.. Select the fresh kale when you buy them. Throw the stem of the leaf by taking the green part only. If it is very tender you can use the stem after slicing finely. Wash the leaves under the running water several times. Drain water well. After cut finely. Cut some onion, chillies with one clove of garlic. I used 1/2 cup fresh coconut. (If you are using the desiccated coconut make sure to add water and microwave before using. Add a teaspoon oil in to a pan. Leave it to be very hot. Stir fry the onions and chilles until the onions are translucent. Add the kale or the Athu gowa with enough salt. Stir fry several seconds. When it start changing colour add coconut. Stir fry another minute. Don’t over cook the vegetables. That will help to loose colour taste and the nutrients. Serve hot with rice.
