Leek & Potato curry is a nice curry when you are in a hurry. With out cooking two you can do it in few minutes.

This recipe will serve 4 people.

 

Clean several potatoes & leek . Wash well.

Cut one onion and garlic and split several green chillies. Prepare some curry leaves and cinnamon. (Adding fenugreek seeds and Maldive fish flakes is optional)  Prepare  1 tsp curry powder, a 1/4 tsp turmeric powder, and 1/2 tsp chilli powder.

Cut the potatoes in to cubes, Add some water and cook until slightly cooked  and add 1/2 cup of thick coconut milk  in to the pot.

Add the leeks and cook until the sauce thickens. (Don’t over cook the leek)

Serve hot with rice.
