Leeks always a nice vegetable to cook in different ways. When I have no green on the plate I try this with leeks. Its everyone’s favourite.Try this with fresh coconut and also with dried shrimp for a change.
This is using 250 g fresh cleaned leeks. Cut the leeks in to 2 and clean the leeks well under running water several times. Cut it finely.
You can use white and green parts in this or green only. I used about half a cup of fresh coconut in this too.
Prepare 1/2 tsp mustard seeds, 1 table spoon full Maldive fish flakes, 1/4 Tsp turmeric powder, and 1/2 Tsp chilli powder. Add about a table spoon full coconut oil in to a pot and leave it to be hot.
Add the spice powders with salt,Maldive fish flakes in to the hot oil. Stir well and add the sliced leeks in to it.
Stir well and add the fresh coconut on to the half cooked leeks and stir well about one minute. If you like a bit of lemon or lime juice in it feel free to add in to it.
Serve with rice.
