When I am feeling too lazy to cook I do this roti. Its so nice and flavourful and do not need any other thing to go with this. Try making these with freshly grated coconut. So it gives the creamier taste with a crunchy texture. This recipe will serve 3———–4 people.

I used about 2 cups of freshly grated coconut.

slice 2 large onions with enough green chillies to your taste.

Add finely chopped curry leaves or parsley. I added about 1/2 a bunch.

Add all the onions, chillies and herbs on to the coconut with enough salt to the taste.

Mix well.

I added about 2 cups flour. I always add less flour. So you can get a better taste.

Add water little by little and knead well.

If you find it wet add a bit more flour. To get the final tough add about a table spoon flour and knead. So it stops sticking to your fingers.

Get the dough ball to this consistency and divide to equal parts.

Make the roti by adding a bit of flour on top. You can use a rolling pin or use your palm to get the shape.

Add a bit of oil on to a pan and leave to be hot.

Put the roti and cook about 2 minutes.

Turn to the other side and cook again.

Serve hot. leftover can be left well covered in fridge 3 days. Can freeze too.
