When you mix beetroot with potatoes it thickens the curry nicely. It gives a different taste than cooking it by it self. The colour becomes a bit pale but the taste is completely different.

This is about 350g beetroot and 200g potatoes.This recipe is will serve 6 people. Clean one beetroot and a potato or two.

Cut some onion, chillies and prepare some curry leaves, pandan leaves, cinnamon. Add 1/4 tsp fenugreek seeds too.

I used one teaspoon chillie powder, 1/2 tsp cuury powder, 1/4 tsp pepper, and a pinch of turmeric powder. Add salt to your taste. You can always adjust the spices according to your taste.

Cut the beetroot  and potatoes in to strips or cubes and put in to a pot.

Add all the spices in to the pot..

Add about 11/2 cups of water. Mix well.

Cook until the potatoes and the beet root are tender. You can always add extra water if needed.

Add some coconut milk. I added one cup of thick coconut milk.

Cook until the sauce thickens. Check the salt level . Serve with plain rice.
