Pumpkin is a whole year round vegetable available in Sri Lanka. Pumpkin curries are cooked in different ways. I like the stir fried pumpkin too. This is so simple and easy dish that can be cooked in a hurry. Takes a very little time to prepare and and cook too. Try using coconut oil to get the authentic flavours in your cooking.

Buy very fresh deep dark yellowish pumpkin for this recipe. Cut the Pumpkin in to thin but small slices. (This way its easy to cook)
Cut one onion, several cloves of garlic, green chillies, cinnamon and , some curry leaves. I used a table spoon full Maldive fish flakes, 1/4 tsp pepper and 1 tsp chilli powder. Other than that prepare some mustard seeds too.
Put a pan on the stove with some oil. Use coconut oil for a better taste. Add the mustard seeds first and let it splutter. After add onion, curry leaves, garlic, chilli and cinnamon.Stir fry about one minute.
When the onions are translucent and start releasing the aromas add the spice powders with Maldive fish flakes. Stir fry really well.
After add the pumpkin and stir well.
When you can prick using a fork its ready. Don’t over cook the pumpkin at all. Serve hot with rice.
