We live in a busy world. Sometimes we like to cook something quickly still we find hard with the long process. When I am busy or want to do a curry quickly i do this quick potato curry for dipping crusty bread or even for rice. My kids love this curry. So here I am sharing the recipe with you all.

Always buy fresh looking potatoes. Never use the green coloured ones or ones shooting.

Using a peeler or a knife peel the potatoes well.

I used a grater to grate the potatoes. You can cut in to matchstick using a sharp knife.

I used several green chillies split in to two., 1 table spoon Maldive fish flakes, onions, curry leaves and cinnamon. 1/2 tsp fenugreek seeds. If you have use pandan (Rampe) if you have.

I used 1/2 tsp Curry powder, 1/4 tsp turmeric powder, 1/4 tsp chillie powder and salt to your taste. ( You can directly add these ingredients in to the pot)

Add all the ingredients in to the pot. Add1-11/2 cups water.Mix well and cook on the stove until the potatoes are cooked.

Add a cup of thick coconut milk. Bring to boil and take off.

Serve with Plain rice, bread or  string hoppers
