Radish is a very common vegetable  in Sri Lanka.  There several types. I always prefer the long ones as they are very mild in flavour. I love radish stir fry with shrimp. I thought I should share the recipe with you all.

This recipe will serve 4-5 people. I used 1 radish weighs about 300g. Grate or slice thinly like match sticks. The rest ingredients are several curry leaves, Rampe (Pandan leaves) and cinnamon, one onion with several cloves of garlic.

Wash 150g shrimp with Luke warm warm water. Some contains tiny sand. Make sure to soak 5 minutes and wash them them until the water is clear.

Add a drop of oil in to a pan and leave it to be hot.

Meanwhile prepare the spices, 1/4 tsp turmeric powder, a teaspoon full chillie powder. (The amount of chillie powder always depends on your taste.)

When the oil is hot add all the onions and other aromatic ingredients to the oil and stir fry until onions are translucent.

After add the washed shrimp in to it.

Stir fry really well.

Add all  the spices and salt in to it. Mix well.

After add the radish in to it. Radish releases its own  juices so , put the stove on high. If not it will be soggy. Always needs to keep the radish crispy.

Stir fry really well. until no juices but radish should be nice and crispy.

Serve with plain rice.
