Shrimp with coconut / Koonisso Mallum

This recipe is for 250g Dried Shrimp. The shrimp should be very tiny. Some times you will find coloured shrimp in the market. Try not to buy any looks very orangey colour. This recipe will serve 6-8 people..
Wash the shrimp with Luke warm warm water. Some contains tiny sand. Make sure to soak 5 minutes and wash them them until the water is clear.
Add some oil in to a pan and leave the oil to be very hot.
Cut some onion , garlic and some chillies and prepare curry leaves and pandan leaves.
First add some mustard seeds and  next Add the cut onions in to the hot oil and fry until golden brown.
Add the cleaned shrimp in to the hot oil. Stir fry several minutes until the shrimp is well cooked.
Add some coconut in to a bowl and add chillie powder (Always add enough chillies to your taste)  and salt with a bit of lime or lemon juice and mix well.
Put the coconut mixture in to the stir fried shrimp and cook further few more minutes and take out. 
This can be served with plain rice, or string hoppers.
