This is the way my mother in law cooks bitter gourd. Its a red beautiful curry not bitter at all. She gets that red colour from the tomatoes and red chillies in oil. I like the gravy in this curry too.
This is one bitter gourd weighs about 250 g. This will serve 4 people.Wash and cut the bitter gourd as you wish. I always take throw the seeds. But you can use seeds too. The other ingredients are curry leaves, rampe, cinnamon, 1 tablespoon curry leaves, sliced chillies, onion and garlic.
For the spices I used 1 tsp chilli powder, 1/4 tsp turmeric powder, and 1/2 tsp curry powder. I used three tomatoes diced. Instead of tomatoes can add goraka or tamarind too. But tomatoes gives this curry sweet flavour as well as the red colour.
Add some oil in to a pan. and leave it to be hot. When the oil is hot add the spice powders and fry lightly.
Add the rest of the ingredients in to the hot oil and fry one minute and after add about a cup of water and cook on a low heat until the gravy is thick. Add enough salt and about a teaspoon or two full sugar. stir well.
Serve with rice.
