Spicy Chicken Fry

Chicken is always nice with loads of spices for the Sri Lankans. This is a very spicy chicken fry that you can do for serving with rice or even as side for a drink.

This recipe will serve 4-6 people.

This is 500 g chicken thighs. Dice the chicken thighs  and prepare the ingredients. The spices I used are 1/4 tsp turmeric powder, 1 tsp chilli powder, 1 table spoon full coriander powder, 1 tsp fennel and cumin powder 1/4 tsp pepper , cinnamon, cloves and cardamon. Add all the spices on to the chicken and  marinate it using your hand to coat each and every piece . Leave about 1/2 an hour.

Meanwhile prepare the other things needed for the chicken fry. cut or slice one or two onions, green chillies and get some curry leaves, cinnamon and cardamons. For tempering you will need 1 tsp mustard seeds and a teaspoon full cumin seed and 1 table spoon full coconut oil.Add the coconut oil in to a pan and leave it to be hot.

Add the mustard and cumin seeds when the oil is hot and let it splutter. later add the chopped onion, garlic, chillies together with cinnamon and curry leaves.

Later add the chicken and stir well. I added a table spoon full vinegar too. Instead you can add tomatoes or tamarind. stir well and cook about 20 minutes. Serve with rice or flat bread or even bread.
