In Sri Lanka we always get freshly caught sea prawns. They are far better than farmed prawns. I found these beautiful fresh sea prawns and thought of doing a curry that I used to eat when I was a kid. I learnt this curry from my late grand mother,
This recipe will serve 4-6 people.
This is 500 g Prawns. First take the heads off.
Use a small sharp knife to make a slit along the middle of the back to expose the dark vein. Pull out the vein.
Put the prawns in to a pot. Cut one onion, several cloves of garlic, one tomato (Optional) and some chillies. Add some curry leaves, cinnamon and pandan leaves (Rampe) too
I used a tea spoon full curry powder, 1/4 tsp turmeric powder, chilli powder, pepper and some salt. Add cut ingredients and spices on to the prawns as shown in the picture. Add some water in to that (About 1/2 cup) and cook several minutes until the colour of the prawns changes.
After add about a cup of thick coconut milk and cook well. But never over cook the prawns.
Serve with rice bread or even string hoppers.
