When you buy pork try to get the fresh ones. Ask you butcher to cut it for you.

Cut 1/2 of an onion, several cloves of garlic, one inch cinnamon, several cardamon and cloves,1-2 tomatoes, green or red chillies, Curry leaves and pandan (rampe) leaves and put all on to a plate.

Prepare the spices. Add salt, 1 tsp or less chilli powder,  turmeric powder, 1 table spoon full coriander powder, 1/2 tsp cumin powder and pepper. (I added half a teaspoon)

Add a table spoon full oil. Let it heat up.

Then add the spices. It will roast the spices in oil.

Then add all the aromatic stuff in to the spices.

Stir fry for 30 seconds.

Add the pork and fry 5 minutes on a low heat for the spices to coat. So all it will seal well.
