Okra, a famous vegetable in the world. Its much better when you get the tender okra. When you buy okra make sure to buy freshly picked tender ones. If you are overseas you can get okra from the freezer section in Indian super markets already cut and frozen.
This is a simple way of cooking okra. This is about 300 g of cleaned cut okra. This will serve 4-5 people.
Slice one or two large onions and green chillies. Get all the other ingredients closer to you. cinnamon, curry leaves and pandan leaves and about a table spoon full Maldive fish flakes.
Add oil in to a pan and leave to be hot. When the oil is hot add dried chilli flakes with salt. Chillies are always to your taste. I added about a teaspoon.
After add the other prepared ingredients. Stir fry well until the onions are translucent.
next add the okra. Stir fry well. Make sure to keep the green colour. Don’t over cook them. In two minutes it ready. To do a dish like this takes only few minutes.
Serve with rice.
