Sweet capsicums are nice when stuffed. Capsicums can be stuffed with different fillings. with fish, potatoes or even meat. This recipe is a copy cat of my late grand mother. I used to stuff them for her all the time.
When you buy capsicum to stuff make sure to buy the same size or short capsicums.
This is about 250 g Capsicums and this will serve 4 people. Wash the capsicums thoroughly. Then make a slit in the middle. Take all the seeds out using a tea spoon.
Take about 3 table spoons full Maldive fish flakes, 1/4 Tsp turmeric powder, 1/2 tsp chilli powder, 1 tsp curry powder, & enough salt to your taste. (Remember you can always adjust the spices according to your taste) Cut several green chillies, and several onions finely.
Add all the cut onions chillies spices and Maldive fish flakes in to a bowl and mix well.
Fill the onion mix in to the capsicums.
After cut one tomato, and prepare about a 1/4 tsp fenugreek seeds., garlic & cinnamon, Add some coconut oil in to a pan. Leave it to be hot.
Stir fry all in the oil.
Lay the Capsicums on top of the tomatoes. Cook on a low heat covered until the capsicums are tender. Make sure not to use a spoon or stir. Only you can shake the pot.
Add about a 1/2 cup of coconut milk in to it. Cook until the gravy is thick. Serve hot with rice.
