Have you ever tried glass noodles? Its really good in one pot meals. I used the sweet potato glass noodles. It holds the shape vey well. For a quick meal I did this one serve of glass noodles. You can use all what you have at hand. The main thing is to gather everything closer to you. While preparinmg the meal you can boil the noodles and leave it aside.
Always use what you have in pantry or in the fridge.
This recipe will serve one person.
Boil & drain one small (100g ) glass noodles . Always read packet instructions.. Prepare the ingredients. I used one boiled chicken thiigh, spinach, broccoli and cauliflower with corn. Other than that I used 2 cloves of galic with 1/2 inch ginger and 1/2 of an onion.
I mixed 1/2 tsp soy sauce, 1/2 tsp oyster sauce and a 1/2 tsp sesame oil in one bowl. Add some oil in to a pan and leave it to be hot.
Add onion garlic and ginger with chicken and saute well.
After add the vegetables.
Next add the sauces mixed together.
Lastly add the noodles and finish off.
If you like a meal in a different way try using this recipe for a change. I used chicken breast in this recipe. My famil;y love this dish. I always serve this with a nice side salad. You can even try on crusty or toasted bread. If you like to create a onepot meal try adding extra vegetables and you willget a nice dish for a dinner with no time.
To create a meal you can add potatoes, carrots and celery. That will add extar flavours too.

This recipe will serve 4-6 people.
Prepare the ingredients and leave them next to you. I cut some red chilles , giner and garlic, onions, and get the oil .
Prepare chicken meat by cutting in to little pieces. Add oil in to the pan and add the chopped ingredients in to the oil and stir fry until golden brown.
Later add the chicken in and stir fry well. Add salt and pepper to season. I always use chinese chilli paste to flavour the rice.
Add the chilli paste on to the chicken and stir fry well.
Add a table spoon full oyster sauce, a table spoon full soy sauce and 1/2 tsp corriander and cumin powders.
Grate carrots, leeks and some cabbage. Add the cut and grated vegetables in to the chicken. After add the rice.
Add the rice and add the sauces. Mix well.
After portion control in to a bowl and press well. Put it upside down. Take the bowl out.
Serve with a porched egg, sliced cucumber and tomatoes.
These little tartlets are really good and so simple and easy to make. They do not need any proofing like other breads. It can be made in less than an hour. It makes a full meal when you add a topping with meat and vegetables. Also can be served as a side or as a canape too.
Instead of the meat I used left over meat from the roast or even a simple curry with vegetables will be good on this tart. After baking it gives a nice golden colour crust too. Make your own filling for this and enjoy!
This is a simple idea for a busy night. Trust me no one will say no and can be done in few minutes. All you need is several ingredients & this is a one pot meal too. You can do this in a pan or even in a sandwich press. I always use my sandwich press for this. You can add what ever you have with out sticking to a recipe….
It takes only ten minutes for everything.
Use the left overs from your Sunday roast or try pan frying some chicken for this.
I always buy wraps when I do my week end shopping for my lazy days.
Take a wrap and microwave or heat up in a pan for getting the flexibility with out breaking the wrap.
Butter the wrap for a better crunchy texture and more flavour or just omit this step.
Pull out some chicken and leave on one corner.
Wash your favourite salad leaves.
Lay them on the chicken.
Add some cucumber on top.
Add a a layer of tomatoes too .
Finish with slices of cheese.
Fold it overlapping the ends.
Put it on the sandwich press, grill or even a pan.
Toast it until golden brown.
Chicken meat loaf or any other can be done a day ahead and bake the next day. The left overs are always nicer in sandwiches. I always make it with all the fresh ingredients.
Its best to buy your own meat and grind them in a food processor as all minced meat contains extra fat. Always the thigh tastes much better. The secret to a best meat loaf is to make it with out going drying. If you use shop bought bread crumbs it dries out. Use the left over bread in your meat loaf. Instead of using the food processor you can wet them and crush them to the loaf too.
I used 500 g chicken thigh fillets. I put them in a processor and processed until like minced meat.
I added onions, garlic, green chillies, a table spoon English mustard, pepper, cumin and coriander powder and 3 table spoon tomato chutney. You can use fruit chutney or sweet chilli sauce too. As I always mention the spices are always to your taste. process several pieces of left over bread and two eggs.
Add the processed bread crumbs, processed ingredients on to the meat or Process all of them together.
Add the eggs and get the meat on to a baking paper and form the meat to a loaf. You can use the making paper wrapped around and press to make it like a log.
Bake on 180 c about 40-50 minutes. Leave few minutes to settle and slice as you serve. Leave the left overs in fridge to use later.
Sausage rolls can be done with any meat. I used chicken mince in this recipe. Its so simple and easy to make. You can always adjust flavour and vegetables to your taste.
Here I used lean chicken mince. When you buy the mince try buying the lean mince or do it your self. If not most mince contains lots of fat.
This recipe will serve 10 people.
I used 500 g chicken mince , several sliced chillies (optional), 1 grated carrot one onion finely sliced with one leek finely sliced. For binding I used 3 eggs.
Add the mince in to a bowl. In to that add eggs, salt and pepper. After add the vegetables. Meanwhile process some fresh bread or left over bread in a food processor. (Fresh bread makes the mix softer) If not use shop bought bread crumbs for this recipe.
Mix the chicken with the vegetables and add the bread crumbs after. Mix well until all get combined equally. I always use a piping bag for easy handling. If not you can always lay the meat as shown in the picture.
Cut the tip of the piping bag to the size you want your sausage rolls to be. I used shop bought puff pastry sheets. Pipe or lay the meat as shown in picture. Whisk one egg and brush the pastry as shown.
Cut the pastry as shown in the picture to the desired size. Lay them on a baking tray.
Brush the tops of the pastry with the egg wash and sprinkle some sesame seeds on top. Bake them on a oven preheated to 200 c about 20-30 minutes or until golden brown on top.
Serve with a hot chutney or tomato sauce.
Chicken tenderloins are the best the healthiest part in a chicken. But if you don’t do it right it can go dry soon. One healthiest way of doing is to crumb them and bake them in the oven.
This recipe will serve 4 people.
get the chicken tenderloins and cover them in plastic. Using a meat tenderiser flatten the tenderloin.
- For the spices, I used 1 tsp Garlic powder, 1 tsp paprika, bit of pepper and some salt to the taste.
- After tenderising the meat will look like this.
- Add the spices on to the tenderised meat.
Add about 1/4 cup of flour on to a plate and coat the tenderloin with flour.
Break two eggs and add about 3 table spoon full milk in to it. Use 1 cup of bread crumbs. I used panko crumbs. Dip the floured chicken in the batter.
Crumb the chicken care fully. And put them on a baking tray. Spray some oil to prevent burning. Oven bake until golden brown. Serve with some sauce and a side salad.
Chicken and leek bread rolls are a soft and moist bread that you can keep for 3 days in fridge or freeze in sandwich bags. So simple and easy to make too. As I always do baking I got more than 100 requests to do something savoury and this is for all who requested and like doing baking.
As this comes as a bread but divided too this saves time of making individual buns. I love to do baking but these days its winter in Australia and it takes too long to prove. But I can’t say no to those who asked me to do something different. You can save this as a finger food too for a party.
For the filling
- 1 smoked chicken breast
- 2 eggs
- 1 leek finely sliced
- 1 block cream cheese
- 1 onion finely sliced
For the dough
- 600g Bread flour
- 10g Instant dry yeast
- 10g Sugar
- 50g Butter
- 50ml Whipping cream
- 1 tsp Baking Powder
- 5g Salt
- 200ml water
- Whisk the eggs and pepper and add in to the cream cheese. Mix other ingredients and mix well. If you like to any other thing to the mix add anything as you wish. Leave in Fridge until finish with the dough.
- Add the flour, in to the mixing bowl and mix with sugar, salt and yeast.
- After adding the whipping cream and water mix well. After knead about 15 minutes until not sticking to the bowl. Put the prepared dough in to a bowl and leave in a warm place to double in size.
- When the dough is doubled in size put the dough on to the bench and cut in to two equal parts.
- Roll each part to a rectangular shape and spread the dough on each dough to cover the whole dough.
- Roll the dough to a log and cut as directed in the video.
- Leave again to double in size.
- Brush the dough with some eggs and sprinkle some sesame seeds on top. Bake on 180c about 30 minutes or until golden brown on top.
