Almond meal or almond flakes or kernels are very nice in any cake. I use flakes always to decorate the cakes but some times I add in to cakes too to give a bit of crunch to the cake. This is a very soft and a moist cake that any one will love to have.

I couldn’t stop eating this slice. I love this a lot. Hazelnuts and chocolate goes really well with each other. Adding Irish cream makes it more rich in taste too. Make sure to roast the hazel nuts before using.
I have done this slice a lot of times. But if I make it at home I am the one who finishes it all the time. Once with out adding any cream I added only Irish cream. OMG the taste was awesome. if you are serving kids do not add any liqueur. You can add different flavours that goes well with the chocolate.
I love banana in any type of a cake. These muffins are one of my favourite muffins. You can do them in a larger batch and freeze them like I do. When ever you want them its there for you in freezer.
These are good for kids lunch boxes too. Add less sugar if you don’t mind. You can cut them in half and serve with cream or ice cream too. These are cafe style muffins and they are really large. You can do them in small muffin pans too If you do them in regular ones you will get 24 muffins or more. So divide the recipe by 2 to get a smaller batch.

Marie biscuit pudding is an all time favourite in Sri Lanka. We enjoyed this as kids a lot. Still I love this. Its so simple and easy to make and also ready in 10 minutes.
There are things that you need to know. Adding an egg will not do any harm as the hot butter will cook the egg. In video I mean cooking as the curdling of the egg, That’s why you need to keep on stirring for a longer time while adding the hot butter. I have done another recipe before and this is the updated version of it.
The other thing to remember is that you can double the liquid for covering the biscuits with out adding chocolate at all.
I have uploaded several pictures of the finish product and how to freeze in individual snack bags. You can always freeze this dessert in snack bags to please kids or your guests later too. Thaw it before serving or take out the day before and leave in fridge to take the next day.

Pineapple & chocolate gateau was made to the request of one of the subscribers. She requested me for a cake that is very popular in a restaurant in Sri Lanka. So I did this cake as a copycat for that .
This cake is a very moist cake. but if you are serving this cake as a dessert try wetting the cake with more pineapple juice before adding the icing.
Also try adding pineapple in the middle if you are using the cake the same day. Make sure to put the cake in the fridge too.
With out adding pineapple you can freeze this cake for up to 3 months.
Cookie dough fudge is a simple and easy no bake and egg free recipe. So easy to make. Not only that you can always freeze them for future use.
When you have time try making the cookie dough balls and leave in fridge. Next you can make the chocolate layer in few minutes. This can be done with white chocolate and make cookie dough balls with dark or milk chocolate too.
This a simple and easy idea for school events , brunch, or even kids birthday parties.

For the cookie Dough
- 60g Butter
- 65g Sugar
- 30ml Milk
- 100g Plain flour
- 75g Chocolate chips
For the fudge
- 300g Chocolate melts
- 50ml Condensed milk
- 40g Butter
- Extra chocolate chips
- Add sugar, butter in to a mixing bowl and mix well.
- Into that add vanilla and flour and mix well.
- Lastly add the chocolate chips and mix until it combines.
- After make balls and leave in fridge.
- Add condensed milk, chocolate, and add butter and melt in a pot on the stove.
- After pour it over the cookie dough balls and decorate with the left over chocolate.
- Put in fridge over night or until sets.
- Cut as you wish.
- Leave in fridge or freeze them to take out when you want.
Tiramisu is a beautifully layered Italian dessert, normally made with raw eggs in and as a custard. I did this with out eggs. One reason is it to give an idea for those who don’t consume eggs.
If you do not like to use liquor please don’t use any at all. Even this tastes beautiful with out eggs and liquor. Instead you can add pure vanilla paste to get more flavour.
All you need to remember is not to soak the cookies longer time. If you dip them longer it can break easily and will not get a nice layers like in my picture. When you leave it over night the flavours go through all the cookies and liquids get absorbed and becomes like at hick slice. I have friends who change the recipe and dip the cookies in drinking chocolate than in coffee. That way it gives a beautiful chocolate flavour to the slice.

- 250 Mascarpone
- 3 tbsps. Marsala/Rum (optional)
- 20g cocoa
- Savoiardi Sponge Finger
- 75g Sugar
- 300ml Coffee
- 1 tsp Vanilla
- 300ml Whipping Cream
- Whip the cream with sugar until it reaches to the soft peak. Take out.
- In to the same bowl add the mascarpone cheese, vanilla, liquor, several spoons coffee and whisk several minutes.
- After add the whipped cream in to the mixing bowl. Mix well together.
- Dip the cookies in coffee.
- Spread a layer of mascarpone.
- Continue with several layers.
- Finally spread another layer of mascarpone and sprinkle some cocoa or grated chocolate.
- Leave in fridge overnight.
- Cut and serve with more cream or ice cream.
