Though banana bread can be done in different ways , one of the best ways is with condensed milk. To get the colour and add some sweetness I added molasses in it. But you can totally omit molasses from this recipe too.
This bread is not very sugary as I didn’t add much sweetness to this bread. One way this bread is healthy with less oil and sugar. The other thing is you can serve this with a cup of coffee with extra butter or jam if you wish.
Where ever I go I order banana bread with my coffee. I always noticed that there is a huge difference from cafe to cafe. Don’t try from commercial type places as they put preservatives to keep longer.

When I was a kid fruit salad was one of the very famous desserts in Sri Lanka. Most of the time its done for special occasions only. With the globalisation everything has changed and now it has become a common everyday dessert.
When doing a fruit salad you can use any fruit that is available during the season. mainly, pawpaw, pineapple, mangoes as they are available throughout the year in Sri Lanka. If you are overseas you can use a lot of different types of fruits in a fruit salad. Other than that watermelon, grapes will add more colour.
The difference to other fruit salads is that most Sri Lankans including my mum add condensed milk on the fruit salad before serving. One reason was that time no fridges and also no critical illnesses .
Try the fruit salad at least once with a bit of condensed milk to see how tasty and elegant looking the fruit salad is.
I used one papaya or pawpaw. Peel and remove the seeds. Then cut in to chunks.
The same way peel and cut the flesh in to chunks.
Peel the pineapple and cut in to chunks. I used half only as the pineapple was huge. 🙂
Other than that I used a banana (Make sure to add banana when you are ready to serve , if not it can go brown and ruin the look of the fruit salad) . pear and apple and juice of two lemons. You can replace lemons with orange, mandarin or even limes.
Cut all the fruit in to chunks.
To give extra colour I added grapes and strawberries.
Put the salad in to serving bowls and top with condensed milk .

My hobby is baking and gardening . I love experimenting bread every weekend. Its spring here in Australia and that means I am baking bread again. In winter its hard to proof. But still I used the warm oven for proofing. So you can see more bread soon.
This bread sounds hard but very simple to make. Its worth putting the effort to bake this beautiful bread at least once. The bread is so light and soft. I prefer this just like the milk bread. So tasty with butter and jam. 🙂 Even you can use with savouries too.
This stays out two days with out a problem and also last about 4 days in fridge. Can freeze up to three months too. To get the softer crust add butter on top of the bread. Leave the bread covered with a clean tea towel about 5 minutes. You can get a glaze as well as a softer crust this way.
If you want to spoil yourself with more condensed milk add several spoons on to a slice of bread ………………. 😀 I did…..Yum…
Condensed milk is a thick form milk with added sugar. Now there are several categories of condensed milk. When I was doing this video I didn’t find the one with low sugar. If not I would have used more condensed milk by reducing a bit more milk. The reason why I didn’t add a lot of condensed milk is sugar and when its heavy it gives heaviness to the buns. If you like more sweetness can add more sugar too. I still worry why I didn’t open the buns to show you how it looks like.
As I always say the kneading process should be longer to get a good quality bun.When you knead well they form gluten, which is the protein that allows bread dough to stretch and trap gas bubbles produced by yeast. It give s a good texture as well as a good uniformity.
In most Asian countries they use condensed milk for making tea. It gives a nice flavour to the tea. When ever I open a can I leave about two table spoons full to make a beautiful cup of tea. I love to sip a condensed milk tea quietly to get the real taste of tea. Recently I visited a closed by Malaysian restaurant and I saw they making condensed milk tea there. Instead of dessert I thought I will order a cup of tea. Oh god it was heavenly.
- 200ml Warm Milk
- 50g Condensed Milk
- 400g Bread Flour
- 30g Butter
- 1/2 Egg
- 15g yeast
- 35 g Sugar
- 1/2 the Egg for brushing the tops
- Add the flour, butter and salt in to a mixing bowl and mix well.
- Add sugar and yeast to the warm milk and leave to activate.
- Add egg and condensed milk and mix that with the flour.
- Add yeast little by little while kneading and mix well.
- Knead about 15 min.
- Put that to a greased bowl and leave it in a warm place to prove.
- After cut the dough to equal size portions.
- Then Make balls (Watch Video) and leave it to prove again .
- After brush the tops with the remaining eggs and bake 180c about 20-30 min.
Its really handy to have several easy desert recipes in our personal cook book. This is one of them. So simple and easy to make as well as can keep longer. I always try to give you all the exact recipes that work as a charm.
If you are a vegetarian you can always adjust the recipes with Agar Agar. 1 tablespoon gelatine powder = 2tablespoon agar flakes and 2 teaspoon agar agar powder.
I found if you reduce the milk to 200ml it works better. Its up to you to decide.
- 300ml Milk
- 85g Plain Flour
- 1 Tblsp cocoa Powder+ 1/4 cup warm water
- 1 Can condensed milk
- 200g Caster Sugar
- 6 Eggs
- 50g Melted powder
- 20g Gelatine powder
- Dissolve cocoa in warm water
- Add milk in to a pot & Dissolve gelatine. (Whisk while adding gelatine in to milk.)
- Next add vanilla, condensed milk and bring to boil.
- Whisk eggs with sugar in a mixing bowl.
- After add flour and butter .
- Later add the boiled milk in to the mixing bowl. Whisk well.
- After Take out and divide in to two parts. Add dissolved chocolate into one. Pour as directed in video.
- Chill over night.
- Serve with cream or ice cream.
