Chinese Spongy Egg Cakes

These beautiful Chinese cakes are very similar to the sponge cakes we had in Sri Lanka when were kids. So I thought of trying this to renew my memories.

This cake a very spongy very less oil cake. I added less sugar. If you like this to be very sweet add up to 125g sugar. When you beat the eggs make sure to continue at once until it reaches the ribbon stage. After using a spatula fold it well.

Few main tips to follow.

  • When you do this make sure to whip well.
  • After leave the cupcakes 10 minutes out before putting in oven. If you like a very high sponge use self raising flour or 1/2 tsp baking powder.

If you like you can do a nice icing too.

Ingredients

  • 4 Eggs
  • 90g Plain flour
  • 35 g Corn flour
  • 75-100gg sugar
  • 10ml oil
  • Vanilla

Method.

  1. Add eggs in to a mixing bowl. Add sugar little by little while whisking. Add a table spoon boiling water in to the egg mix and keep on mixing until it reaches the ribbon stage.
  2. After sift the flour in to it and fold in to the egg mix  with the oil.
  3. Fill the patty pans and bake on 180C about 10-15 min.
  4. Cool on a wire rack.

 

Vanilla & Chocolate Marbled Loaf cake

Marbled cakes can be done in different ways. This is the simplest marble cake.  This is actually a loaf cake that you can try with more butter if you wish. This comes so nice and soft too. The nice golden colour and the long split says so much about this cake. If you wish to do a small one you can always half this recipe with out a problem. If you don’t mind the size I made freeze the rest to take out when you feel like something to go with your coffee.

Adding the amount of cocoa can be done with a small amount too. With out cocoa you can always add a colour. There are so many options with your own creativity level.

Instead of using self raising flour and corn flour together you and add both together to use corn flour. Adding a baking paper to the tray is for easy release. But if you have a good quality non-stick loaf pan try using with out any baking paper.

Ingredients

  • 4 Eggs
  • 225g Butter
  • 30g Cocoa
  • 2 Tsp. vanilla
  • 200g Sugar
  • 400g Self raising flour
  • 50g Corn Flour
  • 160ml Milk

Method

  • Prepare a 12×4 inch loaf pan.
  • Preheat the oven to 180c.
  • Add softened butter , sugar and vanilla in to a mixing bowl and start mixing it until nice and creamy.
  • When it is nice and pale in colour add eggs one by one and whisk well.
  • Next lower the speed & add the flour little by little until its well combined.
  • Lastly add the milk and whisk well.
  • After mixing take 2/3 of the mix out and leave the other 1/3 of the mix in the mixing bowl.
  • Add the sifted  cocoa in to the 1/3 in the mixing bowl. Whisk well. If you find it dry you can always add a bit of milk to make it nice and smooth.
  • Put the dollop of the vanilla mix here and there and do the same with the cocoa mix.
  • To get the marbled effect use a fork to mix. But do not over mix.
  • Bake on a preheated oven until a skewer inserted comes out clean.
  • Cool on a wire rack.
  • Suitable for freezing too.

Date Cup Cakes

Date is one of my favourite. I do use dates in my baking a lot. I got so many requests asking for date cup cakes and thought of doing it for them. After baking I had a cup of tea with that so nice and beautiful, fluffy little cakes. its really nice with out any icing or sauces. Just enough sugar for my taste. But if you like your cup cakes to be very sweet try adding a bit more sugar.

Dates are rich in fibre and lots of vitamins and minerals. If you can buy fresh dates thats the best.Its  very nice in cakes and all other sweets.

Mixing bicarbonate of soda make this cake soft and fluffy.  you can add few more grams of extra dates for this recipe too.

Cann leave this cake about a week out side in air tight container or can freeze about 3-6 months.

Ingredients

  • 200g Dates
  • 75ml water
  • 1 tsp Vanilla
  • 50g Brown sugar
  • 2 Eggs
  • 100g Self raising flour
  • 50g Butter
  • 1/4 tsp bicarbonate of soda

Method

  1. Add the dates in to a pot with water. Bring it to boil. Add bicarbonate of soda in to it. Stir and leave aside.
  2. Next add sugar and butter and mix well.
  3. Add eggs and whisk well.
  4. Add flour on a low speed and mix well.
  5. After add vanilla and dates and whisk until it breaks the dates.
  6. Pour in to muffin holes.
  7. Bake on 170c about 20-30 minutes or until a skewer inserted comes out clean.

Rhubarb Dessert Cake

Ingredients

  • 4 Eggs
  • 150g Margarine or butter
  • 150g self raising flour
  • 200g Sugar
  • 500g Rhubarb

Method

  • Add margarine or butter ( room temperature) with sugar  in to a mixing bowl and whisk until creamy and pale in colour.
  • Next add eggs and mix well, scrape down edges.
  • Keep on mixing adding vanilla and whisk until creamy and pale in colour.
  • Reduce the speed to speed one and then add flour ,mix.
  • Take the bowl out from the machine and add the rhubarb.
  • Fold with a spatula.
  • Spray a 8×8 inch cake pan and pour the batter in.
  • bake on 180c about 50 min to 1 hour.
  • Cool on a wire rack.

Greek Style Sweet Bread Muffins

Not only Greeks enjoy talking about their history they really enjoy the food too. They have so many beautiful breads and cakes. I love lots of different styles of baking and I thought of sharing this after a friend suggested this to me.

For a more authentically Greek Easter bread, season it with Mahlab and mastic. You can buy online or from Arabian or Greek food stores. This is a very different style of bread with a hot sugar syrup. This syrup absorbs to the bread like a magic.

If you do not like the muffins very sweet you can always omit the sugar syrup. You can half this recipe with out a problem.

Always when you have left overs freeze them and use them when you need.

Ingredients

  • 70g Butter
  • 75ml Milk
  • 100g Sugar
  • 2 Eggs
  • 440g Bread flour
  • Zest of one Orange
  • 12 g Instant dry Yeast
  • 50ml Warm Water
  • 100g Sugar
  • Vanilla (Few Drops)
  • Pinch Cinnamon
  • Any kind of a nut chopped for topping

For the Syrup

  • 50ml Water
  • 150g or 1 cup Sugar

Method

  1. Add bread flour, orange zest, yeast, sugar, cinnamon, vanilla, eggs, milk and water in to a mixing bowl and knead until its smooth and elastic. About 20 min.
  2. Leave in a greased bowl in a warm place to double in size.
  3. Then cut in to pieces and make balls. Put them in muffin trays or disposable foil cases.
  4. Leave to double in a warm place.
  5. After brush the tops with eggs sprinkle some nuts and bake on 180c about 15-20 min.
  6. Before taking the bread out boil sugar and water and pour over top of buns when they come out from oven.
  7. Cool on wire a rack.
