20 Minutes Nasi goreng

Life is much easier if you can create your meals in few minutes. We all are having busy lives and find hard to create a good & well nutritious meals for the family. This  Nasi Goreng will help you to create a quick and simple dish in 20 minutes for the whole family.

This recipe will serve 4-6 people.

Prepare the ingredients and leave them next to you. I cut some red chilles , giner and garlic, onions, and get the oil .

Prepare chicken meat by cutting in to little pieces. Add oil in to the pan and add the chopped ingredients in to the oil and stir fry until golden brown.

Later add the chicken in and stir fry well. Add salt and pepper to season. I always use chinese chilli paste  to flavour the rice.

Add the chilli paste on to the chicken and stir fry well.

Add a table spoon full oyster sauce, a table spoon full soy sauce and 1/2 tsp corriander and cumin powders.

Grate carrots, leeks and some cabbage. Add the cut and grated vegetables in to the chicken. After add the rice.

Add the rice and add the sauces. Mix well.

 

After portion control in to a  bowl  and press well. Put it upside down. Take the bowl out.

Serve with a porched egg, sliced cucumber and tomatoes.

Green Pea & Ricotta Cannelloni

One pot meals for busy night is an ideal option. This recipe is so easy to do. You can cook and freeze this meal with out a problem. The other way is to prepare and bake is the next day. When you have time prepare everything together for all busy week days. Plan the week ahead. So it is so simple to do.

Having spinach with ricotta all the time I thought of doing with green peas. This was so nice and creamy and so easy to prepare too. Instead green pea you can use any other kind of a legume for this too.

This recipe will serve four people.

I boiled two cups of frozen peas. Put the peas in to a pot with salted water and cook until tender.

 

Other than that you will need 2 eggs, a bottle of  pasta sauce or home made pasta sauce, 1 tsp garlic , and one finely sliced onion.

1 Pack Cannelloni and a tub of ricotta cheese

Drain the cooked green peas and lay the cannelloni on the tray.

Mash the boiled green peas until mushy.

Add eggs, onions, garlic, salt and pepper in to the mashed peas and mix well. After add the ricotta and mix well.

Later it will look like this. Put that in to a snap lock bag.

Cut the end of the bag and fill the cannelloni and lay them back to where they were.

 

Pour the tomato sauce on top. Spread it nice and even.

Sprinkle the cheese on to. Bake on 180c about 1/2 an hour or until golden brown on top.

Zucchini & Tuna Slice

Zucchini is a vegetable grows in summer time. You can create many things using zucchini. Its used in savoury and sweet dishes in the culinary world.

The famous Zucchini slice is made with bacon. In addition to bacon I used tuna that every one can easily find.

You can grate and prep every things one or two days before and assemble it on the day. This slice has not much carbohydrates but rich in proteins. This is an easy way of making a meal in few easy steps in this busy world. i have given all the description with the pictures below.

Buy 500g fresh looking zucchini , wash and dry.

Using a grater grate the zucchini.

You can squeeze out the water or just use as it. I normally don’t squeeze.

Open a can of Tuna and drain the water. I squeeze the excess water all the time.

Chop some garlic and onion.

Add some oil in to a pan. About a table spoon or two.

Fry the onion and the garlic in the hot oil.

Add salt pepper, one teaspoon full stock powder, one tsp cumin and coriander powders. Then fry in the oil until it releases the aroma.

Add the squeezed tuna and fry several minutes

Next add the grated zucchini.

Break 8 eggs directly in to a mixing bowl.

How to make Egg Biriyani in your rice cooker.

Biriyani one of the best rice dishes in the world. I call it a one pot meal. So easy to make in the rice cooker. To adjust the recipe to the busy world I thought of doing it in the rice cooker. Its best if you have a non stick one.  As this is very rich in flavour I used to do it only for a special occasion. Adding butter or ghee makes this dish more richer. Using eggs makes it a bit simple and easy. If you add marinated meat it give more calories.

Its handy to have all these spices in the pantry. Most of the spices use here have lots of medicinal values. The aroma is all over the house  from the start to the end. Eggs should be hard boiled. When you stir make sure to be gentle as it can break so easily.

When I do special rices I all ways try to do with less water. Then it comes out nice and fluffy. The reason why I use a chop stick here is to stir well without giving much pressure to the rice. So there will be no lumpy rice remain when you serve and it helps to mix with all the spices equally.

Instead of eggs you can use meat. The process is very long than with the eggs.  Instead of curd always can swap with sour cream, whipping cream natural or Greek style yoghurt. Saffron is the key ingredient for vibrant colour. So beautiful in colour if you can use the natural saffron than artificial colours. Soak several threads in milk before using. You can buy  good saffron as threads or as the powder.

Selecting rice for this dish is the other thing. When you buy basmati rice for this ask for the premium long grain good quality rice . The long rice gives a nice look to the dish as well as an aroma.

Ingredients

  • 3 Cups Rice
  • 41/2 cups water
  • 1 tsp cumin powder
  • 2 Tbsp. raisins
  • 3 Tbsp. Cashew
  • Green chills cut in lengthways (optional)
  • 1 -2 Inches cinnamon
  • Several cloves
  • Several cardamoms
  • 1 Onion sliced
  • 2 Tbsp. Garlic and Ginger
  • Hand full of mint leaves
  • Hand full of coriander  leaves
  • 1tsp. Garam masala
  • 1 Tbsp. Coriander powder
  • Butter
  • Saffron powder
  • 1 cup curd
  • Enough no of  boiled Eggs
  • All about table spoon full, cumin seeds, coriander powder, chilli powder,, saffron powder

Method

  1. Add part of the butter in to the rice cooker pan or a pot and Add some cumin seeds.
  2. Let it splutter and  add the spices in the last raw of the ingredients list.
  3. Fry the spices and add the boiled eggs and stir to coat with the spices. Fry several minutes. Take out on to a plate and leave aside.
  4. Now add the  rest of the butter in to the rice cooker and fry all the spices with cashew and raisins.
  5. Add the rice and fry the rice to get coated with the spices about  3-4 minutes. After add the water.
  6. Close the lid. Once cooked , use a chop stick or something similar to stir well.
  7. After add the eggs stir carefully and close the lid for another 5 minutes.
  8. Ready to serve with a home made chutney or a pickle.
