Blueberry & Cream Cheese Bakery Buns

These bursting Blueberry buns are moist and scrumptious. The cream cheese gives a creamy flavour to the tart while blueberries gives full of goodness and colour. When you open them up the buns the purple colour juices gives a tempting and appealing look. You cant stop eating them at all.

Doing them the way I have done is super simple. You can use burger moulds or disposable foil cases or even muffin pans. If you are using muffin pans try cutting the dough in to smaller pieces. The other way is using a tart cases or one large one.

The other thing is you can leave them in fridge about three days. (I doubt it will stay that long) Can freeze them in individual bags for future use too.  If you want to serve these for a high tea or a brunch try cutting them in to smaller pieces .

Fish Rolls/ Chinese Rolls

Fish rolls or Chinese rolls are one of the finger food that available in Sri Lanka.  Its so simple to make . The advantage is you can make a larger batch and freeze them for future use. But… remember to thaw completely  before frying  them. If not that can split in oil. Instead of fish you can add any filling.

This recipe is given by one of my good friend who had a restaurant in Melbourne for long time several years before. She said to me “try this method and you will be amazed to get the results”. Actually it is true. The batter is so silky. Leaving the batter after adding butter in fridge for several hours or overnight it gives this miracle texture to the pancakes. Its really hard to find people who gives the correct recipes. She said ” I don’t want to keep it to my self” “I like what you are doing, Give them this recipe too” I am really proud to have a friend like that who has the same wish as me.

When you buy fish rolls you have no idea whats in it and how they made it. Try these simple method and you can get 25 rolls out from this. (It depends on the pan you are doing the pancakes). When we buy food we know that we are spending too much money on labour than the food it self. Your children will love to have something like this in their lunch boxes once in a while. I know most of the kids refuses vegetables. Grate everything and stir fry with the filling. because of the crunchy and tasty out side they will eat anything in it. I did that most of the time for my kids.

If you like this in the oven than deep frying add a bit more butter (Doubling the amount of butter in the batter)  in to it. The other way is crumbing the rolls with panko crumbs and spraying oil well before baking. Don’t expect the same results as frying anyway. But it is much healthier.




For the batter

  • 450g Flour
  • 1tsp baking powder
  • 1 tsp. salt
  • Turmeric powder
  • 3 Eggs
  • 450ml water
  • 50g butter melted

For the filling

  • 4 Boiled potatoes mashed
  • 2 cans mackerel
  • 1/2 of an onion
  • 1 tsp Curry powder
  • 1/2 tsp Chilli powder
  • Pinch of turmeric powder
  • Garlic
  • Curry leaves
  • Green Chillies (optional)
  • Pepper & Salt
  • Oil for stir frying

For the covering

  • 1 cup flour
  • 1 1/2 – 2 cups water
  • Pinch turmeric powder
  • Salt

For the coating

  • Bread crumbs

Oil for frying


  • Add flour, water, eggs, salt, turmeric powder and mix well. If it is thick add more water and make it to thin batter. ( Just like the pancake batter)
  • After add the melted butter and mix well. Leave to rest several hours in fridge.(or leave overnight)
  • Meanwhile make the filling by adding  some oil in to a pan. Fry the onion, garlic curry leaves and all the spices.
  • Next add the mackerel and fry well.
  • Take out and add mashed potato and leave to cool down.
  • Make the thin batter for coating by adding the flour, enough water, turmeric and salt. Leave aside.
  • Put the bread crumbs in to a plate so you can roll the rolls well.
  • Make the pan cake after seasoning the pan.
  • Put the filling in the middle and roll as directed in the video.
  • Dip in the second thin batter and coat with bread crumbs.
  • Make all before start frying.
  • Put oil to heat and fry the rolls until golden brown.
  • Drain on paper towels.
  • Serve with tomato sauce or chilli sauce.

Cornflake Crusted Chicken Nuggets in oven





  • 4 Boiled chicken breasts
  • 2 Eggs
  • 1 Tblsp Lemon Juice
  • Paprika Powder
  • Pepper
  • Fresh onions or onion flakes
  • Fresh garlic or Garlic powder
  • Chopped Parsley
  • Mustard powder or cream

For the crust

  • 3 cups corn flakes
  • 1/2 cup Parmesan cheese
  • flour to coat chicken
  • 2 Eggs for Egg wash and halfacup of milk


  1. Process corn flakes and Parmesan cheese. ( process until crumbly)
  2. Leave a side.
  3. Add chicken breasts in to the same processor parsley lemon juice,paprika, pepper,onion and garlic powders and parsley. Process until fine and add the eggs and the mustard.
  4. Take out and make balls.
  5. Coat in flour.
  6. Egg wash. Cover with corn flakes. ( Mix eggs with milk)
  7. bake on 180 c about 20 minutes. Serve with tomato sauce or chutney.

Cheesy Triangles




Bread and cheese are always nice together. When you cook cheese in it it is much nicer. When you have a party or even for a change try this recipe. So simple and easy to make. The other thing is you can bake it the day before. This is a very goo recipe for freezing too.

Selecting cheese for this recipe …… when you want to bake a bread like this always go for hard cheese like cheddar, parmesan etc….

I wanted prove this quickly and put it in a warm oven. (Even the chefs make mistakes .. Hah ha) . When I took out the cheese melted. No worries after baking I got the results I was expecting.


  • 400g Bread flour
  • 150ml Milk
  • 100ml Oil
  • 15g Sugar
  • 5g Salt
  • 7g Yeast

For the Filling

  • 60g Butter
  • 2 Tblsp Garlic powder or finely chopped fresh garlic
  • 100g Mixed cheese (Hard Cheese)
  • 2 Egg Yolks
  • 2 Tblsp Sour Cream
  • Sesame seeds for sprinkling


  1. Mix all the filling ingredients and leave aside.
  2. Add bread flour, oil, sugar, yeast and salt into a mixing bowl and mix well.
  3. Start adding milk little by little until it forms a smooth dough. (Do not add milk at once )
  4. Leave to double in size in a greased bowl in a warm place covering with a damp tea towel.
  5. When the dough is ready take out  and punch down.
  6. Sprinkle some flour on a bench and  roll to rectangular shape.
  7. Spread the cheese mix on top.
  8. Roll the dough to a log.
  9. Cut in to triangles as directed in the video.
  10. Leave to double in size.
  11. Brush with eggs and sprinkle sesame seeds on top.
  12. Bake on 180c about 20-30 min or until golden brown on top.

Pancakes with a Sweet Coconut filling/???? ????

Pancakes are easy to make and saves time. When you want a quick snack or to treat an unexpected guest Sri Lankans make these in 10 min to offer with a cup of Ceylon tea. The cooked fresh coconut in treacle gives this a juicy and pungent flavour unique to Sri Lanka.

Sri Lanka has an abundant supply of coconut. I still can remember my childhood. We had coconut plants around my house and when we want fresh coconuts we plucked some with out a problem. We got treated with these beautiful pancakes more often and this is something I love to eat.

You can use brown sugar instead of the treacle.But treacle is the best. It gives the nice colour to the filling and the sweet pungent flavour. Cardamon gives the aroma and when all added thats the beautiful treat you can ever get to accompany a Sri Lankan grown cup of tea.


For the pancakes

  • 300g Plain Flour
  • 2 Eggs
  • 350ml Milk
  • Pinch of Turmeric Powder
  • Pinch Cardamon Powder
  • Enough Salt

For the Filling

  • 21/2 half cups fresh coconut
  • 11/2 Cups Treacle (Kithul Palm or Coconut Palm)
  • Pinch Cardamon Powder
  • Vanilla


  1. Make the pancake batter adding flour , turmeric, cardamon,  salt, eggs and milk.
  2. The batter has to be thin. leave rest.
  3. Make the pancake filling by adding treacle in to the coconut.Cook until the liquids evaporate.
  4. Make the pancakes by adding a spoon of batter and turning the pan.
  5. Take out when ready to remove. Put the Filling and roll folding ends.
  6. Enjoy with a coffee.
