Beer Battered Flathead

Fried fish always tastes nicer. Fried fish can be done in different ways. This is one way of doing fish in a batter. When I was an an apprentice I got more than hundred pieces of fish to fry on Fridays. I loved to fry fish. Only thing I didn’t like was to stand near the fryer.

There are different types of fish that you can use for frying. Flathead is the best out of all. One thing is really easy to cook. The other is the flavour. Once fried its really nice and crunchy.

I am using 500 g Flathead for this recipe. Add salt, pepper and lemon juice on to the fish and mix well to season.

Add plain flour on to the fish and coat with flour. In a separate bowl Add 1 cup of flour and a bottle of beer . Mix the flour and beer well.

I always season the batter with a bit of stock powder. Then the batter tastes better. meanwhile mix the flour with the fish well.

Put a pot of oil on the stove. Put the fish in the batter. When you take it out make sure to drain excess batter out. Fry the fish in oil turning until golden brown .

Serve hot with chips.

Sri Lankan Style Devilled Tuna

Tuna is a very common fish used in Asian countries. They cook tuna in different ways. Tuna has a commercial value too. People consume tuna than any other fish in the world. In Sri Lanka it comes as a dried flaky fish (Maldive fish flakes)  too to use in all the other cooking to give an extra taste and protein too.

This type of a dish is very good with a special  rice to serve as one pot it contains everything in one dish. If you are not a chillie lover you can omit chilles from this to cook this adding some extra tomato sauce.

Bon Appetit!

This recipe is for 500g Tuna. When you buy Tuna buy the fresh tuna with red flesh.
Add several table spoon oil in to a pan. Let the oil comes to a high temperature.
Add the tuna in to very hot oil. Lower the temperature to medium high.
Stir fry. I normally toss the tuna than using the spoon. Stirring can damage the cubes.
meanwhile prepare the ingredients. needed.I am using several green chillies cut in length ways. You can use banana chillies instead. One to two onions sliced, one medium size carrot cut in to wedges or diagonally, 0ne tomato, leeks and garlic with ginger.
The spices I am using or 500g tuna are, 1/2 ts p pepper, Enough salt, 1 Tablespoon full chilli powder, 1/2 tsp turmeric powder.
Fry tuna and take out. After it will look like this.
In to the same pan add a table spoon full oil. Make it very hot.
In to the hot oil add garlic, ginger and curry leaves. Stir fry few seconds.
Next add carrots. Stir fry 30 seconds. Always leave the carrots nice and crunchy.
Add the spices in to it.
Sir well with the spices. When the spices fry in oil it gives a nice colour as well as a nice flavour to the dish.
After add all the other vegetables and fry one to two minutes on a high temperature.
After add 1/2 cup of tomato sauce.
Stir well to get coat with all the spices.
Add the tuna in to it.Stir fry well about a minute.
After stir frying the it will look like this. take off from the stove. Serve with , fried rice, plain rice, yellow rice or even

Sri Lankan Style Dried Fish Curry

Dried fish are available in all markets or grocery shops around Sri Lanka. There are so many varieties of dried fish. Salt is the preserving agent here. So it is full of salt. You need to soak the dried fish   in water to take the excess salt out. Once you cook into a curry without adding salt, it meets the salty taste. Adding tomatoes gives a nice colour, sourness and a bit of sweetness to the curry too. Instead of tomatoes you can always add tamarind or goraka Garcinia cambodia) into the curry.

Cooking with coconut milk itself make the dried fish absorb all the flavours through and also makes the curry really nice and thick. It gives a bit of creaminess as well as the oil from the coconut and gives a nice colour and look to the curry.

Cooking styles are different from person to person in Sri Lanka. It is how it evolves from generation to Generation. We never followed written recipes. Always how you were taught and what you learned from your mom and grand mom  carried to the next generation. One reason of creating my channel is to share the knowledge and to give the correct recipes to  the whole world.
