Two Tone Mondrian cake

This is a colourful cake that I love to bake when ever I can.  Making this two tone cake is really simple and is really a bit hit a any tea party or even for a cafe. It tastes so yummy and the condensed milk I used to glue the cake makes it Devine

Sometimes you might think that this is a very complicated cake. Not really. I have given very clear instructions to do it . The other change I made to this  is using a mirror glaze than a usual chelate coating. That actually makes this beautiful cake looks really beautiful and elegant.

Chocolate is a good treat for any one at any time. You can do this for a birthday cake too. Try making several layers to make it more attractive.  You still can do a mirror glaze on to or even a chocolate ganache.

My daughter was giving very good complements to me all the time I make this cake. I always freeze the left over cakes  for future use, If you  freeze them in individual bags you can thaw as you need them.


For the Cake:
125g Butter
– 120g sugar
– 80g Plain Flour
– 70g Corn Flour
– 4 Eggs
– 2 Table Spoons of Cocoa Powder
– Vanilla or any other Flavour

For The Mirror Glaze:
– 100g Milk Chocolate
– 40g Water
– 6g Gelatin Powder
– 60g Sugar
– 40g Condensed Milk


How to do a Mirror Glaze

The latest trend is the mirror glaze in the cake world. A well shiny and a mirror like glaze gives any cake an elegant look and a glossy effect.Its so simple and easy to make too. Its just pouring a simple gelatinized mixture over a frozen cake.

If you want a cake with a smooth surface Ithink the mirror gaze is the best. The cake needs to be frozen. So when the gelatin hits the frozen cake it sets in no time. gelatin is the most important ingredient in a mirror glaze. Glucose syrup helps the mixture from crystallizing. Condensed milk helps the mixture to flow. White chocolate used for colouring and you can use milk or dark chocolate for brown colour.

How to do a Mirror Glaze

  • 5 g gelatine
  • 25 g water
  • 25 g water
  • 60 g sugar
  • 60 g glucose syrup
  • 70 g white chocolate
  • 50 g condensed milk
  • A frozen cake
  1. Leave a cake to freeze in a freezer.
  2. Sprinkle gelatin water 25 ml water and leave to absorb.
  3. Put in microwave for 30 seconds or until it melts.
  4. Add water glucose syrup and water to a pot or a microwaveable jug and bring to boil.
  5. Add Add white chocolate and condensed milk to it with the gelatin and mix well.
  6. leave it to come to 30 c and pour it over the frozen cake.
  7. leave set in fridge.
  8. Serve once thawed.


Creamy Sago/ Tapioca Pearls with Jelly

Sago/ or Tapioca pearl is a common and a famous dessert in Asian Countries. It comes in two forms, Larger pearls and smaller pearls. Smaller pearls are very easy to cook and it needs no soaking at all. But when you cook larger pearls make sure to soak it few hours . When you soak it puffs up well. if not you will see an uncooked middle.

Cooking sago is simple and easy. You can use fresh milk or coconut milk for this. They both gives a creamier and a rich  taste to it. Adding Jelly makes it look elegant and colorful. Select the flavours as you wish. I used raspberry jelly for this recipe.

You can make these jelly and sago the day before you serve. Can  be done is a larger tray too. But don’t forget that it can go messy too.

Creamy Sago/ Tapioca Pearls with Jelly

  • 1 packet jelly
  • 125 g sago (soaked)
  • 250 g condensed milk.
  • Few drops of Vanilla
  • 500ml milk
  1. Soak the sago.
  2. Measure the condensed milk and add milk in to it.
  3. Add sago and the flavour and cook until it thickens.
  4. Pour in to bowls and leave to cool. Put in fridge.
  5. Make the jelly according to packet instructions.
  6. Pour on to to the sago and leave to set.
  7. Serve with whipped cram or pouring cream.


Simple Rainbow Bundt Cake

Kids birthdays and colourful cakes , something I used to do all the time when my kids were little. I use the do this rainbow cake in different ways and I thought I should share the recipe. You can do this in different styles of cake pans too. The cake look very elegant and kids will love it for sure.

I did  this recipe for years and years . Recently when I was looking for another recipe I found it hidden between two pages. I thought I should do it once for you all.

You can decorate this cake with butter cream . Cut the cake in to several layers and sandwich with butter cream too. It will give a higher  cake too. If you want to do a larger cake try multiply it to suit your needs.

Rainbow Bundt Cake

  • 80 g Cake Flour
  • 40 g Sugar
  • 1/2 Tsp baking powder
  • Pinch Salt
  • 1 Egg
  • 20 ml or 1 Tblsp Milk
  • Few drops of Vanilla
  • Clouring for the cake
  • 20 g Butter
  1. Add butter and sugar in to a mixing bowl and whisk well.
  2. Add the egg after and whisk well again.
  3. Add the flour and milk and mix well.
  4. Divide the batter to four parts and add colouring.
  5. Lay as directed in the video.
  6. Bake on 18-0c about 15-20 minutes.
  7. Cool on a wire rack.

Creamy mango Pudding

This creamy mango pudding is a simple dessert that you can try during summer time. Its so simple to make and will not cost a lot at all too. This is a very popular dessert in Asia. When the mangoes are in season try this this recipe with fresh mangoes. You can use frozen or canned mangoes for this too.

If you are a vegetarian try making them with agar agar powder with out gelatin powder. Instead of milk or cream you can add coconut milk too. So it becomes vegan too.

  • 1 large Mango about 680 g
  • 1/2 cup (150 g) Sugar
  • 140 ml( 5/8 cup) Milk
  • 80 ml (1/4 cup) Cream
  • 10 g (1 TSp)gelatin powder
  1. Add gelatin on to the milk to soak.
  2. Chop the mangoes and leave some aside to decorate.
  3. Puree the rest with whipping cream and sugar.
  4. Add the gelatine to the pureed mix and pour in to the prepared bowls and leave in fridge to set.
  5. Serve with the left over mangoes on top and ice cream or cream.


Stuffed Baguette to please a crowd

This recipe is simple but gives a lot of it to please a large gathering. The vegetables I used to fill this baguette is colorful to catch the eye of the  person who is going to have it. You can add more colour to it by adding different types of colourful vegetables.

Cream cheese and feta in this gives a creamy and salty flavour plus act as a binder. So it helps to hold all the vegetable in it and when you slice it it holds the shape.

Baguettes are not expensive. So, to make this to please twenty people cost only $ 7.50. So this is very cost effective too.  Instead of adding feta or cream cheese you can add any soft cheeses to your choice too.

Stuffed Baguette to please a crowd

  • 1 Baguette
  • 100 g Feta Cheese
  • 125 g Cream Cheese
  • 1/2 tsp Different herbs or parsley
  • 1/2 tsp Pepper
  • 1/8 cup Chopped olives
  • 1/4 cup Chopped salad leaves
  • 1/4 cup Chopped tomatoes
  • 1/2 cup Chopped Red and yellow peppers
  • 1/2 cup Grated carrots Chopped pickled cucumbers
  • Left over bread crumbs.
  1. Get the middle out from the baguette as described in the video.
  2. Mix all the chopped vegetables with herbs.
  3. Add the bread crumbs and mix well.
  4. Fill the baguette and cover with foil.
  5. Leave in fridge to rest.
  6. Slice as you wish and serve as a finger food or or as a side.

Eggplant Fried Rice (Simple Meals)

Eggplant fried rice is a simple but elegant  meal that anyone can try in few minutes. Its a one pot meal that can be cooked in few minutes. Adding all the vegetables  with nuts makes it a  complete meal. Add the vegetables to your choice.

I try to do more vegetarian and vegan friendly. If you are a person who needs meat for every meal try doing something like this at least a day for the week and you will be amazed to how tasty these meals are.

Adding variety to your meals take you out from eating the same meals. The fried eggplants are so yummy. When you fry the eggplants make sure to soak them in salt water with a bit of  turmeric. It will keep the eggplants  away from browning and also takes the liquids out from eggplants.If you consider about oil in your meals try grilling the eggplants but fried is the best.

Eggplant Fried Rice (Simple Meals)

  • 4 Cups Cooked Rice
  • 1 tsp fennel and 1 tsp cumin seeds
  • 1/2 cup to 1 cup almond seeds
  • 1/4 cup coconut sugar
  • 2 cups fried or grilled eggplants
  • 1/2 cup grated carrots
  • 1/2 cup coriander leaves
  • 2 tsp ginger and garlic paste.
  • several red chillies chopped
  • 4 spring onions chopped
  • 1/4 cup tamarind juice.
  • Coconut oil for stirfrying
  1. Deep fry or grill the eggplants until golden brown.
  2. Prepare 4 cups of rice. (I used 1 cup rice for each person)
  3. Prepare all the vegetables and nuts as needed.
  4. Put some oil in a pan.
  5. Stir fry ginger and garlic.
  6. Add almonds and fry until golden.
  7. Stir fry veggies and rice.
  8. Add tamarind juice and coconut sugar and mix well.
  9. Add enough salt to your taste.

Bakery Style Sponge Cake

Sponge cakes are always popular for birthday cakes. You will see so many recipes but will not see the secret ingredient they use. Always looks awesome. But when you try , you will not get the same. So I am trying to unveil the commercial way of doing a good sponge wich will be same look the taste and also the texture just as from the bakery or a cake store.

Cake emulsifiers are the secret in a sponge cake. You will be able to buy them online. I always buy my ingredients online. That’s the most convenient way for saving time. How ever once you mix the emulsifier to a sponge cake it comes the same way as you get in a shop. So easy to layer. You can do cupcakes too this way too.

When you do this recipe first preheat oven to 180 and reduce to 160c later before adding the cake. I have asked you to use a 6×6 inch pan as I find that is the best.

How to do  self raising flour



Bakery Style Sponge Cake

  • 80 g self raising flour
  • 40 g melted butter
  • 3 Eggs
  • vanilla or any other flavour
  • 80 g sugar
  • 30 ml milk
  • 1/2 table spoon cake emulsifier
  1. Preheat oven to 180 c. Grease 8x8 inch cake pan.
  2. Add eggs , sugar and emulsifier in to the mixing bowl and mix until fluffy and add flour and milk.
  3. Whisk on high about 3 minutes.
  4. Take out and add the melted butter (20 c)
  5. Mix well.
  6. Bake on 160c about 30 minutes or until a skewer inserted comes out clean.
  7. Cool on a wire rack.

Loaded Vegetable Patties

First of all I must say ,this is a vegan and vegetarian friendly recipe. I always do my way of vegetable patties for the kids. It saves money and we exactly know whats in it. Doing vegetable patties are so simple and easy.Every time I buy them from the super Market I feel its more floury than homemade vegetable patties.  When you do them at home you can always add anything as you wish. The sky is the limit.

I always add seasonal vegetables in my burger patties. One thing is its cheaper to buy the seasonal vegetables and also they are fresh. Adding more vegetables in patties makes it rich as well as tasty. If you are gluten free try using mashed potatoes as the binder instead of flour.

  • 2 Grated Potatoes
  • 1 leek finely sliced
  • several chillies chopped (Optional)
  • 1/2 cup of fresh chopped parsley
  • 2 grated carrots
  • several beans chopped
  • 1 zucchini grated and squeezed
  • 2 cups of finely sliced cabbage leaves
  • 1 grated onion
  • 1 large or several small eggplant/brinjal
  • 1 large sweet potato grated
  • 1 cup plain flour
  • 1 tsp fennel seeds
  • 1 tsp cumin seeds
  • 1/2 table soon basil and 1 tsp dill
  • 1 tablespoon garlic powder
  • 1 table spoon full stock powder
  • Salt and pepper to your taste
  • Coconut oil
  1. Mix all the chopped ingredients in a large bowl.
  2. Make patties as directed in video.
  3. Pan fry them several minutes on both sides.
