Barley Pilaf with chicken and Vegetables

Barley pilaf is a well balanced hot meal for a cold winter. If you soak the barley before hand its so simple and easy to cook.  If not it will take too long to cook. Meanwhile cook the chicken and prepare the other ingredients.

You can prepare the ingredients the day before and assemble everything together when you need. I always prepare the veggies and get ready for the busy week nights.

I used 250 g Barley for this recipe. Add some water to the barley and leave it to soak. After wash and drain all the water and add some water to cook the barley.

Cook 250g chicken after seasoning with salt and pepper in a bit of oil .

After stir frying the chicken leave aside and prepare the ingredients for stir frying. I use done medium size carrot,, one white part of the leek, about 1 cup of cabbage and several leaves of kale or any veggie to add green to the pilaf.

Cut some onion , garlic and some ginger. Add some oil in to the pan and fry until translucent.

Add the prepared vegetables and some spices to your taste & stir fry well.

After stir frying about one minute add the chicken and barley on to it and stir fry well.


serve hot.



Condensed Milk Pound Cake

I like anything made of condensed milk. The sweet taste and the smooth texture of the condensed milk make sweets and desserts really appealing. I have done this cake in large amounts several times I am giving you a smaller size which you can always multiply as you wish.

For this recipe I used a small cake pan . The size is 6 inches x 3 inches. This cake can be frozen for several months. Make sure to slice and leave in snack bags for easy thawing.





  • 100g  self Raising flour
  • 1 tsp Vanilla
  • 1 Egg
  • 125g Butter
  • 60g Condensed milk
  • 40g sugar (Optional)


  1. Add the butter and condensed milk in to a mixing bowl and whisk well.
  2.  After add the egg and whisk again.
  3. Reduce the speed and add the flour and mix well.
  4. Put the batter in to a prepared tray and bake on 180c until a skewer inserted comes out clean.
  5. Cool on a wire rack.
  6. This cake is suitable for freezing.



Pumpkin Soup

Pumpkin soup is one of the delicious soups. You can make a full meal out of that after adding extra vegetables in to it. When you add extra vegetables it tastes so nice giving extra flavour to it.

This can be a good winter warmer and a vegetarian dish too. If you are a vegan try leaving butter and cream and instead use olive oil and rice cream or coconut milk.

This recipe will serve 4 people.

Cut 2-3 stalks of celery, several cloves of garlic, one large onion and white part of the leek. Add parsley or celery leaves.
Cut 400 g Pumpkin (I used Kent Pumpkin) and 2 large potatoes.
Add one serving size for each person plus one extra for cooking. If you use stock powder  add 2 tsp in to it or use stock water instead water. I used 1/4 cup of whipping cream. Add salt and pepper to your taste.
Add butter or olive oil in to a pot. Put it on the stove.
Add all the chopped vegetables in to it.
When the onions are translucent add the chopped up pumpkin and potatoes.
Add the measured stock water in to the pot..
Bring to boil and simmer 45 minutes to 1 hour.
Leave to cool down and add to a blender and add the cream too.
Serve hot with crusty bread or a bread roll.

Yoghurt Dinner Rolls

When baking bread the whole house is full of smell like when you walk near a bakery. It refreshes everyones hunger. Kids are eagerly waiting to have a hot bread roll with butter. I cant stop eating the freshly baked hot bread.

Baking bread is very simple and easy. The only thing is getting it to the right consistency. Kneading the dough is the secret of making good bread.

When adding yoghurt and milk in bread it will make the dough softer. The size of the egg that you are using to make the bread makes a bit wet too. So adding extra flour until you reach the right consistency is not a problem at all. So feel free to add extra flour to make it happen.




  • 115g bread flour
  • 70g Butter
  • 1 whole Egg
  • 3g Salt
  • 10g Sugar
  • 7g  Instant dry yeast
  • 75ml Milk
  • 120g Yoghurt


  • Add bread flour in to a mixing bowl.
  • Into that add sugar, yeast, egg, yoghurt, and salt and mix well.
  • Add the milk and keep on kneading about 5 minutes. (Make sure to add the milk bit by bit as it can go soggy. If that happen add extra flour)
  • After add the butter and keep on kneading another 15 minutes.
  • Leave it in a warm place to double in size.
  • When the dough is doubled in size , punch the dough down and put on to floured surface. Make sure to knead adding more flour until it comes to a dough that not sticking any more.
  • Cut the dough in to equal size pieces and make balls as described in the video and leave in a small baking tray. (I used 6x6inch baking dish).Leave in a warm place to double in size.
  • When it is double in size  brush the tops of the buns with eggs or milk and bake on 180c about 15-20minutes.
  • Cool on a wire rack or serve hot.





Avocado Pound Cake

Avocados are always expensive. Instead always having a guacamole or  in your sandwich or salad give it a different look and a taste. When avocados are in season or when you have over ripped avocados try this beautiful recipe. Its so easy to make and works like a charm. Even one avocado will do.

When you scoop the avocados make sure to add the green part . That gives this cake a unique colour.

Avocados are rich in lots of nutrients.It has lots of vitamin C, Believed to be good for the heart, good to maintain a healthy appetite, strong antioxidant level , lots of vitamin E and fibre. Thats some of them.

If you do not have polenta, don’t worry omit and add a bit more flour to that amount.



  • 200g Self Raising Flour
  • 20g Corn Flour
  • 120g Caster Sugar
  • 3 Eggs
  • 2 Well ripped Avocado
  • 50g Polenta
  • Pinch of Salt
  • 150g Softened Butter
  • Pinch of Bicarbonate of Soda
  • 1tsp Baking Powder
  • 1 Tsp Vanilla
  • 100ml Milk


  • Add butter and sugar in to a mixing bowl and mix until creamy.
  • Add Eggs one by one and keep on mixing another few minutes.
  • After add the vanilla in to the eggs and mix well.
  • Scoop the avocado in to the eggs and butter mix and mix well.
  • Mix bicarbonate of soda and baking powder in to the flour and sift once
  • Add polenta next to the mixing bowl and while mixing add flour and mix well.
  • Pour the mix into a prepared greased loaf pan.
  • Bake on 180c  about 30-40 minutes or until a skewer inserted comes out clean.

Easy savoury scrolls from scratch

I always like to do different styles of baking. Always I try to improve the dough in each recipe. This is one of them. The bread comes so nice and fluffy. So the texture of this bread scroll is very soft and moist too.

The filling can be done in different ways.You can use the sliced meat or shredded meat from the deli with cheese slices. (Thats the easiest) If not you can use the left overs from the Sunday roast or can prepare them on your own. Make sure not to have a liquids. Then the bread will go soggy underneath. Even the cheese will do this to the bread if you use a very fatty version of cheese. I used the proceed cheese because of that.

As I always mention, when adding water do not add once. When using eggs for a recipe, make sure to add a little at once. Then wait and add a bit more. This way the dough will comes soft and pliable.

Always leave space in between the scrolls to prove. I used a 12x 4 inch pan for this recipe. If you are living in a cooler climate make sure to preheat oven to 25-30c and leave the dough in the oven. That way it helps to prove quickly.

  • 400g Bread flour
  • 2 Eggs
  • 10g instant dry yeast
  • 5g Salt
  • 10g Sugar
  • 200-250ml water
  • 1 egg for the scrolls
  • Salt and pepper
  • Seasonings
  • Another egg for egg wash

Filling Ingredients

  • Sliced or shredded cheese
  • Any meat as you wish


  1. Add the bread flour, yeast, salt, sugar, and the eggs in to  a mixing bowl.
  2. Then mix it well.
  3. After add the water little by little until it makes a smooth dough and keep on kneading for 15-20 minutes.
  4. Take out and put in to greased bowl , cover and leave in a warm place to double in size.
  5. When the dough is doubled in size take out and punch down.
  6. After put the dough on to a floured bench and knead a minute or two adding a bit more flour to get to the consistency you like.
  7. After roll the dough to a large rectangle.
  8. Beat one egg with salt and pepper and brush it on the dough.
  9. Season with anything you wish.
  10. Lay the cheese and the meat. (Read the description above)
  11. Roll the dough pressing inwards. (This way it tightens)
  12. Cut to the size you like.
  13. Leave to double in size.
  14. Brush the top with the remaining egg and bake on 180c about 20-30 minutes or until golden brown.

Toblerone slice / Brownies

Some one can ask why you mix Toblerone in a slice with out having it on its own. This recipe is strong enough to break that argument. The mixture makes the Toblerone tastes nicer. The  crunches in the Toblerone makes the slice taste better as well as the cocoa makes the Toblerone tastes much better.

This slice is so simple and easy to make in few minutes. You don’t need a machine to mix too. This is a mix and bake recipe.



  • 75g Self raising flour
  • 25g Plain Flour
  • 25g cocoa
  • 50g Chocolate
  • 125g Butter
  • 2 Toblerone
  • 1 Egg
  • 125g Caster Sugar
  • 60ml Boiling Water


  1. Preheat the oven to 160c.
  2. Prepare a 6×6 inch cake pan.
  3. In to a microwaveable bowl add butter, boiling Water, and part of the Toblerone and heat until it melts.
  4. Sift the flours with cocoa.
  5. Beat the egg.
  6. In to the cocoa and flour mix add the melted ingredients and the egg and mix well.
  7. After add the sugar and mix about two minutes.
  8. Pour half of  the mix and sprinkle the chocolate melts.
  9. Pour the other half on top.
  10. Break the Toblerone and press in to the batter.
  11. Bake about 20-30 min. , or until sets.
  12. Cool completely before cutting.

Simplest Bread & Butter Pudding

Bread and butter pudding takes me to my childhood memories. my mum used to make it for us always. Specially when we were sick. My kids love the pudding too. i make it quite often. Specially in winter time.

You don’t need any skill to make the bread and butter pudding. Its just mixing everything together. I always warm the milk. So it takes less time to bake or steam. But remember not to boil the milk. If you add boiled milk to the eggs it will cook the eggs. So make sure to warm the milk only.

You can always use the stale bread for this recipe. Or even I like to use croissants in it too. Some times with out adding sultana I use fruit bread  too. All work nice and well. The ends of the bread is good to put in a food processor and use in meat balls or any other recipe. Never throw the left over bread in the bin. Use in different recipes.

When you bake this its best on 170c. But it will take a bit longer time. When you put the pudding in a water bath it cooks well with steam and will not go dry too.

When it sets slightly take out and spread some jam or sprinkle some sugar on top. It gives a beautiful glaze to the pudding.

I love to use nutmeg in egg dishes. The flavour is awesome. Even cinnamon powder mix spice will do the job too.

Whenever you do any recipe with eggs give it a time to set after taking out from the oven. So you can easily cut in to the shape you like. If not probability of breaking is  high.


  • 4 slices of bread
  • 600ml warm milk
  • 5 Eggs
  • 50-100g Sultana
  • 1 Table spoon ful sugar
  • 100g sugar
  • Vanilla
  • Nutmeg/cinnamon


  1. Add eggs in to a mixing bowl and whisk well.
  2. Add vanilla, cinnamon or nutmeg, sugar and milk and whisk again.
  3. Sprinkle sultana on bread.
  4. Pass the mix through a strainer on to the bread and leave to soak about 1/2 an hour.
  5. Bake on 170c about 1 hour in a water bath.
  6. Leave several minutes to rest.
  7. Serve with cream, custard or ice cream.

Sri Lankan Style Stir Fried Onion Buns

In Sri Lanka  there are different types of  savoury breads and rolls. This is one of them. I find buying bread in Sri Lanka is very expensive as they import wheat flour. So all the taxes and labour costs add in to it. When you buy a kilo of flour you can make more than 25 buns for a very low cost. When you buy the bun I think you can buy only 2 of them. My son loved these buns when he was in Sri Lanka. Still he loves them. So I make several batches for him always. When they were little I used to buy them these buns from the bred man who visits from house to house early in the morning.Still it is very common in many parts of Sri Lanka.

Caramelised onions can be done in different ways. This is my method. I like spicy taste than sweet taste. Some like it sweet and others like it in both ways. My grand mother and my mum used to cook in this way. So I am used to do it in this way too.

Making bread is really easy when you have practiced it a bit.I always believe the saying       ” practice makes the man perfect” you can fail once or several times. But do not give up. Once you achieve the way of doing and how to over come the mistakes you can be a genius.



  • 600g Bread Flour
  • 1tsp Salt
  • 12g Yeast
  • 300ml Water
  • 2 Eggs
  • 2TSp Sugar
  • 40g Coconut oil


  1. Add the bread flour, salt, yeast, coconut oil,  & Sugar  into a mixing bowl.
  2. Start mixing and add the eggs.
  3. After add water little by little and start kneading about 15-20 minutes.
  4.  Leave the dough in a warm place to double in size.
  5. When the dough is doubled in size take it on to the bench and ad some flour knead again and cut in to equal size pieces.
  6. Roll each piece to an oval shape.
  7. Put the Onion Mix in the middle and press ends. Seal well and turn.
  8. Next shape well and leave to double in size.
  9. After brush the tops with eggs.
  10. Bake on 180C about 20 minutes or until golden brown on top.
  11. Cool on a wire rack before storing.
