Condensed Milk Pound Cake

I like anything made of condensed milk. The sweet taste and the smooth texture of the condensed milk make sweets and desserts really appealing. I have done this cake in large amounts several times I am giving you a smaller size which you can always multiply as you wish.

For this recipe I used a small cake pan . The size is 6 inches x 3 inches. This cake can be frozen for several months. Make sure to slice and leave in snack bags for easy thawing.

Ingredients

  • 100g  self Raising flour
  • 1 tsp Vanilla
  • 1 Egg
  • 125g Butter
  • 60g Condensed milk
  • 40g sugar (Optional)

Method

  1. Add the butter and condensed milk in to a mixing bowl and whisk well.
  2.  After add the egg and whisk again.
  3. Reduce the speed and add the flour and mix well.
  4. Put the batter in to a prepared tray and bake on 180c until a skewer inserted comes out clean.
  5. Cool on a wire rack.
  6. This cake is suitable for freezing.

 

 

Baked Custard with Condensed milk

Baked custard is a simple dessert that anyone can try with out failing. I got so many requests to do baked custard with condensed milk. The reason is in Asia condensed milk and the milk powder is popular. But whipping cream is available in leading supermarkets only. (May be now it is different) So condensed milk is used in lots of desserts and sweets. Here I used a new version with less sugar. If you think this is too sweet add another 1/2 cup of milk or add half of the condensed milk.

Baked custard can be done a day before. Leave in fridge until you want. If you want a warm custard pop it in oven for 10 minutes or 1 minute in microwave. Serve with whipped cream.

Ingredients

  • 6 Eggs
  • 250ml /1 Cup Milk
  • Pinch of Nutmeg
  • 1 can Condensed Milk

Method

  1. Add milk and condensed milk in to a pot. Bring it to just warm. Stir well.
  2. After add eggs one by one and whisk well or whisk the eggs and add directly.
  3. Add nutmeg.
  4. Strain it in to individual ramekins or a small tray.
  5. Bake in a water bath about 40 minutes or until when you touch its steady.
  6. Cool to set.

Croatian Wafer cake / Slice (Oblate)

This slice once brought to work by a Croatian colleague and it was a hit. So after appreciation I got this beautiful recipe that will take you to another world. its so easy and simple no bake recipe. take only few minutes to assemble.

There are several advantage of this recipe. Can make a big batch and freeze in zip lock bags for future use. Few easy steps to follow. As its a no bake recipe saves your time. From these large wafers and do nearly 50-80 large pieces.

If you cant find the larger wafer sheets try using the ice cream wafers. Then you do not need to cut at all and it will look nice too.

Instead of using almond or pistachio try using walnuts as Croatians do.  I am not a fan of walnuts. So I did it differently. Instead of adding butter add a bit more chocolate.

INGREDIENTS

  • 1 Packet Wafers
  • 1 can Condensed Milk
  • 250g Almond Meal
  • 150g Crushed Pistachio
  • 1 Tsp Vanilla
  • 2 Tbsp. Brandy
  • 350g Chocolate
  • 250g Butter

Method

  • Add chocolate, condensed Milk, Butter and vanilla in to a pot.  Heat the mix until butter and chocolate melts.
  • After add more vanilla and the brandy. Stir well.
  • Add the pistachios and the almond meal. Mix well.
  • Lay one  wafer slices on a tray.
  • Put the mix on it and spread evenly.
  •  Continue layering as you wish.
  • Put a weight on top. Lave one hour to press. After put it in fridge over night.
  • Cut according to the way or the size as you wish.

Home Made Soft Milk Buns (Simple Baking)

Making bread is an art. Once you know how to make bread you can create anything. I do bake bread for my family at least once a week. I like making soft and crusty bread. I find making soft bread makes you happy with beautiful textures and also it shows you the road to many other recipes that you can create with the same dough.

When making bread if you can use bread flour it gives a nice texture to the bread because of the gluten level it holds. If you can find gluten separately you can add that to the plain or all purpose flour to make the same bread with the same texture.

The secret of the soft bread depends on how long you knead the bread continuously. It helps activate the gluten content in bread. When you make make sure to check your yeast by add ing a bit of yeast and sugar together to 1/4 cup of warm water. If you leave it out in room temperature it forms up. if not the yeast is dead or expired. If you are not a daily baker always check for the expiry date of the yeast. The other thing is never add salt and sugar close to each other. So always use them in two corners of the mixing bowl before mixing.

Ingredients

  •  290g Bread flour
  • 5g Salt
  • 25g Sugar
  • 5g Instant Dry yeast
  • 30g Butter
  • 25g Eggs and leave the rest for brushing the tops
  • 150ml Milk
Method
  • Add flour , yeast, sugar, egg,& salt in to a mixing bowl and mix well.
  • Next add milk and make a smooth dough and add butter. Knead for 25 min.
  • Leave the prepared dough in a greased bowl in a warm place until double in size.
  • When the dough is ready put on to the bench and punch down, then cut the dough in to equal size pieces.
  • Roll each piece in a ball pressing in wards (Watch video).
  • Leave to double in size.
  • When ready brush the tops with eggs and sprinkle some sesame seeds on top and bake 15-20 min or until golden brown on top.
  • Cool on a wire rack.
  • Can store in freezer for months.

Condensed Milk Creme Caramel

I love condensed milk. I can eat it as it is . All I want is a can of condensed milk and a tea spoon. I love condensed milk tea too. In Sri Lanka most of the tea made with condensed milk . Thats the best tea ever too.

When we add condensed milk in to a pudding or any other recipe we have to be careful when adding more sugar. For me the sugar in condensed milk is more than enough. When doing the caramel make sure not to burn the sugar. If burnt it taste bad. Pieces of burnt sugar can go in to the dessert too.

Sometimes I steam this pudding. Both taste nicer. Strain when you mix eggs in any recipe to prevent clots of eggs later and also it stops egg shells if we have accidentally added.

After baking when you touch the top if it not sticking to your fingers that means it s ready. All egg dishes needs to set it back again. So leave it to cool down unless you are serving it hot. Leaving in fridge makes it well stabilise and can cut in to even pieces. Can store in fridge about two days with out a problem.

Ingredients

  • 1 can condensed Milk (397g)
  • 8 Eggs
  • Few Drops of vanilla
  • 250g Brown sugar
  • 125ml Water
  • 500 ml Milk

Method

  1. Into 250g add the water and caramelise with out stirring.
  2. Pour in to a pan to cool down. It will set in the tray.
  3. Beat the vanilla and Eggs together.
  4. Next add the condensed milk and mix well.
  5. Heat the milk . (Don’t boil)
  6. Add the milk in to eggs and mix  well.
  7.  Pass it through a sieve.
  8. Put water half way through in to baking tray and put the tray with egg mix in to it.
  9. Bake about 1 hour.
  10. Leave in fridge to set.
  11. Put the tray upside down and invert the pudding on to a tray.

Condensed Milk bread Rolls

Condensed milk is a thick form milk with added sugar. Now there are several categories of condensed milk. When I was doing this video I didn’t find the one with low sugar. If not I would have used more condensed milk by reducing a bit more milk. The reason why I didn’t add a lot of condensed milk is sugar and when its heavy it gives heaviness to the buns. If you like more sweetness can add more sugar too. I still worry why I didn’t open the buns to show you how it looks like.

As I always say the kneading process should be longer to get a good quality bun.When you knead well they form gluten, which is the protein that allows bread dough to stretch and trap gas bubbles produced by yeast. It give s a good texture as well as a good uniformity.

In most Asian countries they use condensed milk for making tea. It gives a nice flavour to the tea. When ever I open a can I leave about two table spoons full to make a beautiful cup of tea. I love to sip a condensed milk tea quietly to get the real taste of tea. Recently I visited a closed by Malaysian restaurant and I saw they making condensed milk tea there. Instead of dessert I thought I will order a cup of tea. Oh god it was heavenly.

 Ingredients

  • 200ml Warm Milk
  • 50g Condensed  Milk
  • 400g Bread Flour
  • 30g Butter
  • 1/2 Egg
  • Salt
  • 15g yeast
  • 35 g Sugar
  • 1/2 the Egg for brushing the tops

Method

  1. Add the flour, butter and salt in to a mixing bowl and mix well.
  2. Add sugar and yeast to the warm milk and leave to activate.
  3. Add egg and condensed milk  and mix that with the flour.
  4. Add yeast little by little while kneading and mix well.
  5. Knead about 15 min.
  6. Put that to a greased bowl and leave it in a warm place to prove.
  7. After cut the dough to equal size portions.
  8. Then Make balls (Watch Video) and leave it to prove again .
  9. After brush the tops with the remaining eggs and bake 180c about 20-30 min.

Oreo & White Chocolate Fudge

We find so many recipies include Oreo cookies as an ingredient these days. Kids love them I know. When I bring some for a recipe I have to hide them somewhere that my kids can’t find them.if not after I prepare everything Oreo goes missing. That happened to me so many times..

This recipe calls for only three ingredients and so simple and easy to make.  I have made this for special afternoon teas and functions so many times and I can promise you that this work really well. 

Only thing is when you melt the chocolate try not to over heat as it can go guey. The method for double broiling is to cook the chocolates in a bowl on simmering water until it melts. Good quality chocolates work really well in microwave too.

Ingredients 

  • 750g White chocolate melts
  • 390 g Condensed Milk
  • 4 Packets Oreo Cookies

 Method

  • Melt the chocolate on a double broiler or even in microwave.
  • Add a can of condensed milk in to the chocolate.
  • Break the Oreos in to Small pieces.
  • Mix with the white chocolate and the condensed milk.
  • Pour in to the prepared pan.
  • Decorate with the left over cookies.
  • Place in fridge overnight or several hours until it sets.
  • Cut as you wish.
  • Can freeze for several months.

Sri Lankan Bitter Melon/ gourd (Karawila) Curry/????? ?????????

Ingredients

  • 1-2 Bitter gourd
  • Several Green chillies sliced
  • Few Curry leaves
  • Few inches of Pandan Leaves
  • Few shallots finely sliced
  • 1 Tsp Maldive fish Flakes
  • 1/2 Tsp Curry Powder
  • Pinch of turmeric Powder
  • Pepper
  • 1 Inch Cinnamon
  • 1/2 tsp Fenugreek seeds
  • A few cloves of Garlic
  • Chilli Powder
  • Salt
  • Goraka/ Tomato/ Tamarind
  • 1 Cup Thick coconut Milk

For the Tempering

  • 1Tblsp oil
  • several red chillies
  • Mustard seeds
  • Curry leaves & Pandan Leaves
  • 1 Shallot finely sliced
  • 1 clove of garlic finely chopped.
  • Pinch Turmeric powder
  • Pinch Chilli powder.

Method

  1. Add bitter gourd in to a pot.
  2. Next add goraka, salt, and all the spices mix well.
  3. Add water to cover and cook until it absorb all the water and the bitter gourd is well cooked.
  4. Add coconut milk and cook until the gravy is thick.
  5. If you like only can do a tempering. For that add oil in to a pan. Add mustard seeds. Let it splutter. Next curry leaves, garlic, onions, chilli and fry until golden brown.
  6. Next add the chilli powder and turmeric powder fry and add the curry in to it.
  7. Mix and serve with rice.

Butter Milk Cake ( Egg Whites Only)

Ingredients

  • 225g Self Raising Flour
  • 150g Caster Sugar
  •  Egg Whites
  • 65g Butter
  • 125ml Butter Milk
  • Few drops of vanilla

Method

  1. Beat the egg whites  with few spoons of caster sugar until it comes to the soft peak.
  2. Transfer that to a seperate bowl.
  3.  Add butter and sugar to the same bowl and whisk until pale and creamy.
  4. Add a few drops and vanilla and the flour and mix well.
  5. Add the beaten egg whites in to it. Fold it slowly.
  6. Pour the prepared batter into the tray.
  7. Bake on 180c about 30-40 min or until a skewer inserted comes out clean.
  8. Cool on a wire rack.
  9. Do an icing or cream in the middle. Serve as a tea cake or as a dessert.
