Sri Lankan Style Avocado Smoothie

In Sri Lanka avacado grows in almost all the parts. But the most popular is up country. When I was in Galle ( southern part of Sri Lanka) , we had a huge avacado tree in front our house. The avacado were so big and one is too big for one serve. I cant forget what happened to me when I was trying to catch an avocado and it fell on to my nose. I was bleeding All  the way to the house and my mum and dad were  tried hard to stop the bleeding. Finally I was ok but couldn’t go to school for a week as I had a swollen face ……hah ha….

Ingredients 

  • 1 Large Avacado
  • Several ice cubes
  • Several scoops of vanilla ice cream
  • Milk
  • Vanilla
  • Sugar

Method

  1. Scoop the avacado in to a mixer and add the ice cubes.
  2. Then add milk,vanilla ice cream.
  3. Whisk 1 minute.
  4. Add a scoop of ice cream on the top.

Butter Milk Cake ( Egg Whites Only)

Ingredients

  • 225g Self Raising Flour
  • 150g Caster Sugar
  •  Egg Whites
  • 65g Butter
  • 125ml Butter Milk
  • Few drops of vanilla

Method

  1. Beat the egg whites  with few spoons of caster sugar until it comes to the soft peak.
  2. Transfer that to a seperate bowl.
  3.  Add butter and sugar to the same bowl and whisk until pale and creamy.
  4. Add a few drops and vanilla and the flour and mix well.
  5. Add the beaten egg whites in to it. Fold it slowly.
  6. Pour the prepared batter into the tray.
  7. Bake on 180c about 30-40 min or until a skewer inserted comes out clean.
  8. Cool on a wire rack.
  9. Do an icing or cream in the middle. Serve as a tea cake or as a dessert.

Hokkaido cheese tarts…..

I tried to introduce my page through this video to my dear subscribers and all the viewers. Its heart breaking to see how people dislike someones effort at once with out  looking at the picture as a whole. As I just started my page I tried to get you all in this way to the page. Its a very innocent try. May be I am wrong here. I thought to try a new method…Sorry If I did something bad…….

Any way I will tell why I was so impressed about these beautiful little tarts. Recently I went to Chadstone shopping centre  to change my video camera to a better one. When I was walking I saw this cart with full of little tarts. No wonder why I stopped there. I was looking at them for a while. People were lining up in a queue to buy them. I was waiting to buy them  too. I got several and tasted one. It was awesome. Nice and creamy , very colourful and soft in the middle. All I did while driving back was thinking how to make them for you all.

This is the end product.  I love them so much. I am so happy to get these results. It looks the same and tastes the same. It didn’t stay long  all gone in few minutes. All I like to say is try this at least once and see how beautiful they are……………..

Ingredients for the base

  • 180g Plain flour
  • 40g Sugar
  • 85g Butter
  • 2 Yolks
  • 1 Tblsp Milk

For the Filling

  • 1125g Cream cheese
  • 130g Mascarpone
  • 20g cheddarCheese
  • 10g ParmesanCheese
  • 30g Butter
  • 130ml Milk
  • 50g Icing sugar
  • 20g Corn starch
  • 1/2 tsp Vanilla
  • Pinch Salt
  • 1 Egg yolk

Method.

  1. For the tarts add flour, sugar, butter, yolks and pulse or mix well.
  2. Next add milk little by little and the make the dough.
  3. Then leave to rest in fridge.
  4. Meanwhile make the filling. Add all the cheeses, butter , milk, icing sugar corn starch, vanilla, salt in to a pot and cook until thick. Take out and leave to cool down.
  5. Take the tart dough out and roll to a thin layer. Cut the dough to circles. use a muffin pan or tart cases and press in.
  6. Add a spoon full of the mix.
  7. Bake on 160c about 15 min and take out and brush with egg yolk and bake 10 more again
  8. Cool on a wire rack.

 

Rhubarb Dessert Cake

Ingredients

  • 4 Eggs
  • 150g Margarine or butter
  • 150g self raising flour
  • 200g Sugar
  • 500g Rhubarb

Method

  • Add margarine or butter ( room temperature) with sugar  in to a mixing bowl and whisk until creamy and pale in colour.
  • Next add eggs and mix well, scrape down edges.
  • Keep on mixing adding vanilla and whisk until creamy and pale in colour.
  • Reduce the speed to speed one and then add flour ,mix.
  • Take the bowl out from the machine and add the rhubarb.
  • Fold with a spatula.
  • Spray a 8×8 inch cake pan and pour the batter in.
  • bake on 180c about 50 min to 1 hour.
  • Cool on a wire rack.

Helapa (Sweetened & Steamed Mixed flours with Coconut )/????

Helapa is one of the Sri Lankan delicacy that you will find in any where in Sri Lanka. Its made of pure treacle , rice and Kurakkan (Ragi, or finger millet) flour and with freshly grated coconut. But  nothing is better  like the home made ones with lots of love.

I go to my childhood memories all the time I make these beauties. when we were  kids we were asked to find the leaves to make them. To hear that my granny is making them is something that we get over thrilled.  The rule is need to pick the same size leaves . Then we have wash and try them. So after we anxiously wait for the steaming hot halapa. My mum is very old now but she still make them for us when we go there.

I grew up in Galle. Some they make the halapa with coconut and treacle mix in the middle. They mix flour separately and then fill with sweet coconut filling in the middle. I like that way too. The way I made is simple and easy. It saves time too. If you want to make the sweet coconut mix  try my Pancake with a sweet coconut filling . (There I describe how to make the filling.

The way of making these is someones choice. You can make them with kurakkan flour only or can several flours together as I did. The taste is better when you add several flours in to that.

Make sure to steam them until they are well cooked to get the taste and also to keep longer. I had these I made around a week out side in an air tight container. Nothing is better than a halapa with a nice cup of Ceylon tea.

Ingredients

  • 1 cup Rice flour
  • 1 Cup Kurakkan (Ragi) flour
  • 1 Cup White rice flour
  • 1/2 Cup Plain Flour
  • 500g Fresh Coconut
  • Pinch of Salt
  • 1/2 Tsp Cardamon powder
  • Enough treacle to bring the mix together

Method

  1. Add all the flours with salt and cardamon powder.
  2. Next add enough  treacle to mix all together.
  3. Make balls and press in to the leaves.
  4. Stack the nicely on a steaming tray and steam them for 10-15 min.
  5. Cool completely on a wire rack.
  6. Store in an air tight container.

Triple Chocolate Brownies

Chocolate brownies are my daughters favourite. I make a big batch for her and leave in freezer to have when she wants. I pack individually i  snack bags for the kids to take. She makes beautiful brownies too.

Ingredients

  • 125g Butter
  • 185g Dark Chocolate
  • 2 Eggs
  • 150g Milk Chocolate
  • 200g White baking chips
  • 130g Self raising flour
  • 100g Sugar

Method

  1. Add butter, and dark chocolate chips to melt in microwave or on the double broiler.
  2. Add the sugar, eggs, milk in to a mixing bowl and mix well.
  3. Next add flour.
  4. After add the chocolate (Milk & White).
  5. Mix well and pour in to a prepared dish and bake on 180c about 15-20 minutes.
  6. Cool on a wire rack.
  7. Cut and store in an air tight container.
