Okonomiyaki (Cabbage Pancakes)

Okonomiyaki or the cabbage pancakes are really an easy meal to try when you are really busy.  The other thing is cabbage is less in calories. I am not a person who loved cabbage. Now I love to eat cabbage in these pancakes when ever I feel lazy to cook. As a full time worker I always cut my vegetables oduring the weekend. i store them in fridege for my one pot meals. I call this a one pot meal too.

To make the pancakes a full meal you can add several different vegetables and some meat in to the pancake mix.  Some people like a soft pancake texture when some  others like the fillings with less batter which is enough to bind the  ingredients together. There are no rules for  filling or the  toppings. Use what you have in the fridge.

There is one thing you should remember when you make these pancakes. Vegetables always gives extra liquid when you mix them all together with salt. So be carefull when adding more liquid. I always do several and add a bit more flour for the last few as you will get all the uices out from the mixture.

When making the pancakes try cooking onb a low flame to get the best look. Its served with diferent types of sauces. Add anything to your liking as the topping. If you are a vegetarian try omitting prawns and eggs.

This recipe will serve 4-6 people.

I am using half of a large cabbage . Shredd or grate or cut finely.

Add other flavours to it. I used leeks onions , prawns (I used cooked prawns)and green chillies. Chillies are always optional.

Add about a cup of flour with 3 table spoons full corn flour in to a bowl with salt and pepper.

Break 3 eggs in to a bowl and  whisk well. Pour on to the flour. Add 1/2 cup of milk to mix with flour. Make a batter.

Add the chopped vegetables and prawns on to the batter. Mix well.

Pour the prepared batter with cabbage on to a grill or a pan and cook on low flame on both sides until well cooked.

Serve hot with your favourite sauce as the topping.

Cauliflower Pancakes (Simple Meals)

Cauliflower in a pancake batter makes a beautiful meal for a busy morning or a dinner. They are so simple to make. The meal will be ready less than 30 minutes.  This is a budget recipe as well as a one pot meal. These beautiful pancakes can be left in fridge for 3 days and can freeze for future use. When you freeze make sure to store in individual bags.

Instead of using eggs you can add a banana or some flax meal too. So it will help to bind the ingredients together.

You can change the herbs always to liking.

Spinach Pancakes

I make these pancakes at least once a week. You can serve this with any kind of a filling, a savoury or a sweet filling. These are really  soft and I have added some pictures to show how soft they are.

The colour and the texture of these pancakes attract anyone who  doesn’t like spinach. When you cook them make sure to cook them on a low flame for the brighter greenish colour.

To make the pancakes you will need 225 g plain flour, 85 g corn flour, 3 Eggs, 200 g spinach, salt to your taste, 30 g butter melted with 300 ml milk. You can always adjust the flour level to get the right consistency.

Add the spinach in to a food processor or a blender with milk and process until smooth in texture.

Once processed it will look like this.

After add the plain flour and corn flour in to the mixing bowl.

Next add the melted butter in to it.

After add the eggs in to the blender.

Process it until fully blended.

Put a pan on the stove .Add butter in to the hot pan.

Spread the butter evenly.

Add a ladle of the spinach mix on to the pan.

Turn the pan over to spread the mix or use the back of the spoon to spread it to circle.

I put them on a wire rack . So that way they don’t stick together.

Chinese Zucchini Pancakes

Zucchini Pancakes are one of my favourites. Not only because its full of vegetables but also simple to make. Before making these I always use to do a cake or a slice or Bake with parmesan cheese. Now I do this quite often specially in summer, when there is a lot of Zucchini available.  When you do these pancakes you can add different types of flours to make it a more healthier. I normally use flax meal, whole wheat flour and also oatmeal.

This is about 500g Zucchini .Get fresh Zucchini and shred them or grate them .

Wash 1/2 bunch scallions/ spring onions and wash well several times under running water.

Cut the spring onions very finely.

I used a large green chilli finely sliced. This is optional.Add the spring onions and salt to the grated Zucchini.

Add the spring onions and green chillies with some salt.

I used four eggs for this. You can add less too. Then you need to add more flour.

Add a 60ml oil to it. or you can use melted butter.

Egg & Chive Savoury Pancakes.

I already published one recipe to do thin pancakes. This  recipe takes no time to do at all. When you are busy and want to change your breakfast to something else Try these beautiful and easy to make pancakes.

The things you need for this recipe is always in your cupboard and fridge. When you want to add some extra flavour to this you can always go for other options such as parsley, celery leaves, leeks, or even cooked meat or fish. Always creativity is in your hands.

The other thing is these pancakes can be made a day head for the lunch boxes too. Also this can be served as a sweet cake with cream and berries or even bananas.

How to make Thin Pancakes

One day I made these beautiful thin pancakes for breakfast and it was a hit. After that when ever the kids request I make them at any time. Its so simple and easy to make and all the ingredients are easy to find. If you are a vegan try adding coconut milk instead of milk.

Instead of adding the corn flour you can  add potato flour to the mixture. Both flours are doing the same thing.

Can serve with a dipping sauce or even with cream and ice cream. If you like it as a sweet version add the sugar. It will be good to serve with cream too.

Simple & Easy Blueberry & yoghurt Pancake

Ingredients

  • 300ml Milk
  • 300g Plain flour
  • 3 tsp baking powder
  • A drop of Vanilla
  • 3 Eggs
  • 50g Sugar
  • 50g Butter (Melted)
  • 1 punnet blueberries or any kind of a berry
  • 150g yoghurt or sour cream
  • A pinch of salt

Method

  1. Add eggs, sugar vanilla, and a pinch of salt and mix well about a minute.
  2. While mixing add yoghurt,  Milk, melted butter, baking powder and flour and mix well to get a fine batter with out any lumps.
  3. Leave 15 minutes out to rest.
  4. Spray a pan or a pancake maker and  pour the batter.
  5. Add blue berries at this stage.
  6. Cook both sides and serve hot with cream, honey, syrup or ice cream.

Pancakes with a Sweet Coconut filling/???? ????

Pancakes are easy to make and saves time. When you want a quick snack or to treat an unexpected guest Sri Lankans make these in 10 min to offer with a cup of Ceylon tea. The cooked fresh coconut in treacle gives this a juicy and pungent flavour unique to Sri Lanka.

Sri Lanka has an abundant supply of coconut. I still can remember my childhood. We had coconut plants around my house and when we want fresh coconuts we plucked some with out a problem. We got treated with these beautiful pancakes more often and this is something I love to eat.

You can use brown sugar instead of the treacle.But treacle is the best. It gives the nice colour to the filling and the sweet pungent flavour. Cardamon gives the aroma and when all added thats the beautiful treat you can ever get to accompany a Sri Lankan grown cup of tea.

For the pancakes

  • 300g Plain Flour
  • 2 Eggs
  • 350ml Milk
  • Pinch of Turmeric Powder
  • Pinch Cardamon Powder
  • Enough Salt

For the Filling

  • 21/2 half cups fresh coconut
  • 11/2 Cups Treacle (Kithul Palm or Coconut Palm)
  • Pinch Cardamon Powder
  • Vanilla

Method

  1. Make the pancake batter adding flour , turmeric, cardamon,  salt, eggs and milk.
  2. The batter has to be thin. leave rest.
  3. Make the pancake filling by adding treacle in to the coconut.Cook until the liquids evaporate.
  4. Make the pancakes by adding a spoon of batter and turning the pan.
  5. Take out when ready to remove. Put the Filling and roll folding ends.
  6. Enjoy with a coffee.
