Celeriac Mash

I was so inquisitive about this root vegetable before I really get to know about it. After reading several articles and listening to several people I understood how good this  root vegetable for the man kind. It has so many health benefits. I really love this vegetable. I use it in several dishes on my way. This celeriac mash tastes really beautiful.

Celeriac is high in dietary fibre  and protein as well as many vitamins and minerals. Celeriac is good for joint health, kidney cleanse, and also for weight loss. Other than that good in bone and heart health.

This recipe will serve 6-8 People

I used 1 celeriac weighs about 600g with 5 medium potatoes. When you buy celeriac try to buy one with less holes and round in shape.Celeriac root features rough, knobby outer surface covered with tiny rootlets. Inside, its smooth white flesh has celery-like flavour.

First cut the celeriac in half. Then put the flat side down and remove the outer skin.

Cut the celeriac in to cubes and cut the potatoes too and add directly to the steamer. If not it will go brown.

Once cooked (It takes only 20 minutes) put in to a bowl and add salt and pepper.

Add some butter and cream. (Just a little bit) and mash well.

Serve as a side or as part of your main meal.

Potato & Salmon Cups

Peel 500g Potatoes. Grate them as fins as you can,

Always try to use  the potatoes with out leaving longer. Potatoes always go dark soon. Then the colours will not be nice.

Squeeze the excess liquids

Squeezing the extra liquid is not that easy. But do as much as you can, or dry on a paper towel.

Wash the green part of a leek and then slice finely.

When you wash the green part of the leek make sure to seperate the leaves first and then wash one by one to remove the mud or dust on it. leeks easily collect mud.

I used 3 stock cubes, 1 tsp full curry powder and 1/2 teaspoon full with enough salt to the taste.

I always like extra taste. You can always reduce or omit stock cubes. I used the vegetable stock cubes.

Add four eggs in to it.

Add spices , green part of the leek on to the potatoes.

Add 1/4 cup of flour.

Next add 1 can skin & bone removed salmon in to the potatoes.

Next add the eggs, If you are a vegetarian you can totally omit this.

I used my stand mixer. Always you can hand mix it.

Prepare a muffin pan or individual cups . Spray oil.

Spoon the mixture. If you like add some cheese on top. Bake on 190c about 20-30 minutes.

Serve with chutney or tomato sauce.

Oven Baked Spicy Potato Wedges

As I always all the meals should be very simple but tasty. You can serve this as a nice side dish or even part of a roast. All you want is some simple ingredients that you use in your day today life.

Make sure to preheat the oven to 200c – 250c to get best results.

Peel the potatoes and wash them well.

Cut the potatoes into wedges. The more thin more easier to bake. (But do not make it very thin)

The ingredients are , 1 cube vegetable stock cube, 1 table spoon garlic powder, 1 tsp paprika or chillie powder, 1 Tsp Salt, 1/2 tsp pepper, 1/2 tsp mixed spices.

You will need a 1/4 cup (65ml) oil. (I used rice bran oil) and 1-2 cups of Panko crumbs.

Add spices on to the potatoes

Toss well until it coat all the spices.

Finally add the bread crumbs.

Lay them on a baking tray. Bake on preheated oven 200-250c about 45minutes or until golden brown.

Take them out. If you are doing a big batch make sure to take the crispier ones first. Enjoy!
