I love to have a piece of cake when ever I have a coffee or tea. Banana bread is my favourite. Whenyou bake a banana bread or a cake the house smells like a bakery and even the next door neighbour will get the smell.
This cake is rich , soft and moist too. you canm leave the bread 3-4 days out in room temperature (I dont think you will keep that long 🙂 ) or about a week in fridge or you can freeze them for future use. I recommend you to slice the cake and leave individual pieces in fridge for easy thawing.
This recipe is for a large banana cake. You can divide the ingredients by two to a smaller loaf.

The ingredients you will neeed , 200g Butter in room temperature, 350 g Sugar, 4 Eggs, 2tsp vanilla, 400g plain flour, 2 Tsp Bicarbonate of soda, salt, 150 g Sour cream and 4 well riped banans.
Make sure to gather everything closer to you.
Add sugar and butter in to a mixing bowl and whisk well.
After add the eggs one by one and whisk well.
Add the bananas while whisking on a low speed.
Add the rest of the ingredients and whisk on a low speed first and then whisk on a high speed for one minute.
Add the prepared mix in to a loaf pan and bake on 180 c about 45 minutes to one hour or until a skewer inserted comes out clean.( The baking tray I used is 12 inch x 4 inch loaf pan) Leave the bread in the loaf pan for 5 minutes. After take out from the tray and leave on a wire rack to cool completely.

The coconut sugar is becoming very popular these days and I thought of adding coconut sugarto cup cakes and do a recipe. The redipe is with no oil or butter too. I
This can go dry quickly and I recommend to have it the same day or when you are mixing try adding 3 tablespoons of milk to it to get the consistency right. If you dont mind adding butter try adding 75 g butter to get it well moist.
Coconut sugar is not very sweet. So if you like it very sweet try adding some brownsuar with the coconut sugar for more sweetness.
Okonomiyaki or the cabbage pancakes are really an easy meal to try when you are really busy. The other thing is cabbage is less in calories. I am not a person who loved cabbage. Now I love to eat cabbage in these pancakes when ever I feel lazy to cook. As a full time worker I always cut my vegetables oduring the weekend. i store them in fridege for my one pot meals. I call this a one pot meal too.
To make the pancakes a full meal you can add several different vegetables and some meat in to the pancake mix. Some people like a soft pancake texture when some others like the fillings with less batter which is enough to bind the ingredients together. There are no rules for filling or the toppings. Use what you have in the fridge.
There is one thing you should remember when you make these pancakes. Vegetables always gives extra liquid when you mix them all together with salt. So be carefull when adding more liquid. I always do several and add a bit more flour for the last few as you will get all the uices out from the mixture.
When making the pancakes try cooking onb a low flame to get the best look. Its served with diferent types of sauces. Add anything to your liking as the topping. If you are a vegetarian try omitting prawns and eggs.
This recipe will serve 4-6 people.
I am using half of a large cabbage . Shredd or grate or cut finely.
Add other flavours to it. I used leeks onions , prawns (I used cooked prawns)and green chillies. Chillies are always optional.
Add about a cup of flour with 3 table spoons full corn flour in to a bowl with salt and pepper.
Break 3 eggs in to a bowl and whisk well. Pour on to the flour. Add 1/2 cup of milk to mix with flour. Make a batter.
Add the chopped vegetables and prawns on to the batter. Mix well.
Pour the prepared batter with cabbage on to a grill or a pan and cook on low flame on both sides until well cooked.
Serve hot with your favourite sauce as the topping.
Panna Cotta is an easy dessert to try with fruits or with out fruits. This is a simple summery dessert. Normally panna cotta is made with fresh cream or whipping cream. Adding yogurt in to it made it healthy as well as less in calories.
All the different types of fruits goes well with panna cotta. Specially, mangoes, strawberries , blackberries or raspberries gives a nice and a beautiful colour to this dessert.
Doing this dessert in individual moulds works well too. You can make a coulis or puree fresh fruits to serve with this to give additional flavours and colour.
Cream cheese bread is one of my favourite breads. So creamy and rich in flavour and will come out like cotton soft.My secret for a softer bread is always the kneading process and the correct measurements.
To make the bread softer you can always add softening agents as in bread shops. With out softeners you can make proper bread if you knead well. I never keep any secret to my self. Trust me , you are getting the 100% correct recipes.
These beautiful cookies are loaded with lots of nuts and fruits. I really love the taste and also the texture of it. I didn’t double bake these cookies as I loved the texture which gives a feel of nutty cake.
Normally biscotties are baked two times. If you do not the texture of this cake you can always double bake to leave longer.
If you like you can double bake these for keeping longer. It didn’t stay longer at my place. It will be a real treat with a coffee or to give away for Christmas.
This recipe will make 25-30 slices.

We live a world that where millions of people starving everyday. Try not to throw out food unless it ‘s rotten or nor way of using it. Always you can use the left over food for creating different types of meals. This is one way of using left over food in a meal.
When you have left over bread & meat try using them in a casserole like this. When you have left over meat from a roast or a meal and the last bits of vegetables this will be an option.
if you are not a person who like to have any meat try adding vegetables only. Finely sliced leeks, grated carrots or pumpkin will be very nice in a casserole like this. Cheese is optional but at the end it give s a nice crust and also extra taste to this dish.
This is a budget and a one pot meal. You can bake this the day before. This will be good for breakfast or even dinner too.
Almond meal or almond flakes or kernels are very nice in any cake. I use flakes always to decorate the cakes but some times I add in to cakes too to give a bit of crunch to the cake. This is a very soft and a moist cake that any one will love to have.
The chocolate hive and will take you to another world when you enjoy this with a nice cup of coffee or tea. If I tell you this a very rich and a beautiful cake even for special occasion. Make sure to add the best quality chocolate to get the right taste and the luxury look.

Semolina cakes are nice , crumbly and moist. Adding yogurt to this cakes makes it very rich and creamy in flavour too. This cake is an ideal base for decorating too. It comes fully flat in shape and you don’t need to trim at all.
You can freeze this with out a problem. All you need to do is to put in bags. I personally like the snap lock bags and I freeze individually. So when you feel like something sweet or a dessert you can have them. Just thaw them in microwave to get to the normal temperature.
