Baked doughnuts from Scratch

Doughnuts are always kids special. As mums we worry a lot giving fried food to the kids .Try this baked doughnut recipe and you will be amazed to see the results. They are better than the shop bought ones in shape, look and also the taste. You can do a larger batch and leave in freezer for future use. If you can cut them in to smaller circles that will be the best.

Adding sugar is the next thing. If you like it more or less you can always adjust it according to the taste.

When you want to check your yeast this method is the best. I am a continuous user of my yeast. If you are not baking bread always needs to check the yeast this way. When you add water to the dough make sure to add less as the egg and the water in yeast is there too.

Ingredients

  • 350g Bread flour
  • 9g Instant dry yeast
  • 1tblsp Sugar
  • 2 Tbsps. Warm water
  • 1 Egg
  • 100g Sugar
  • 5g Salt
  • 100ml Milk
  • 30g Softened Butter

Method

  1. Add the sugar warm water and yeast in to a mixing bowl and leave five minutes to activate.(Read the description.)
  2. Add the bread flour, salt sugar yeast, and mix well.
  3. While mixing add egg and milk. When you add milk make sure to add little by little.
  4. Knead well and leave in a warm place to double in size.
  5. Take the dough when ready and punch down and knead on a benchtop.
  6. After roll the dough and cut the doughnuts.
  7. Leave on a baking tray to double in size.
  8. When it is doubled brush with milk and bake 10-15 minutes or until golden brown.
  9. Cool completely on a wire rack.
  10. Melt the chocolates according to the packet instructions . Dip the doughnuts in  chocolate, leave on a wire rack  to set.
  11. Can freeze for several months too.

Self Raising Flour and Cake Flour from scratch (Make your own)

When I do a recipe I always call for the self raising flour for cakes and cookies. So I know in some countries  you are unable to find the self raising flour. If you have to go through a recipe which calls for cake flour try doing it in this way. Both will work like a charm.

Adding baking powder and salt to plain flour  is really simple and easy. Make a big batch and keep for cakes or multiply the amounts and do for the recipe calls for self raising flour.

Commercially we use cake flour for baking. It gives a soft texture to the cakes . So use this simple method with corn flour to get the same texture as in shop bought cakes. I know you will love these two methods that will save your money and time too.

 Ingredients

For the self raising Flour

  • 1 cup plain flour
  • 11/2 tsp baking powder
  • 1/4 tsp salt.

Method

  1. Add 1 cup plain flour and 11/2 tsp baking powder with 1/4 tsp baking powder in to a sifter. Sift all together 3 times to bowl and the self raising flour is ready.

Ingredients

For the cake flour

  • 1 cup flour
  • 2 tbsp. corn flour

Method

  1. Put one cup of flour in to a mixing bowl and take 2 tablespoons of flour out. Add 2 table of corn flour in to the flour. Sift 3 times. So the cake flour is ready.

Almond Cake from Scratch

This almond cake is the most beautiful cake ever. So simple to make. Needs only several ingredients. Following the recipe is so easy. I wrote it in few steps. Its only a bit of flour , & the rest is almond meal. It taste awesome & look gorgeous. When I make this I cant stop eating. It is that nice. Try once, It will become your favourite recipe forever.

It stays about 3-4 days out in an air tight container and can freeze about 3 months. Can leave about 7 days in fridge. All I know is that’s not going to stay longer. 🙂

The finer almond meal the best. But still you can use the coarse one too. If you like the ground whole almonds it will be nice too.  Butter has to be in room temperature too.

Recently I read an article  the benifits of almonds. Almonds help to reduce the cholesterol in the body as well as supply lots of fibre and fills you quickly when you take almond as a snack or in meals. It has lots of magnesium to help muscle functioning and also help to support healthy brain function and also good skin health. Not only that it maintains blood sugar levels and also helps weight loss. How good is that. 🙂

Ingredients

  • 225g Butter
  • 150g Caster Sugar
  • 60g Self Raising flour
  • Vanilla
  • 4 Eggs
  • 225g Ground almond/ Almond flour

Method

  1. Beat butter and sugar with vanilla until pale in colour.
  2. Add eggs one by one and whisk 2 minutes.
  3. Next add almond meal and mix well.
  4. Pour in to a pan and bake 0n 180c about 40 min- I hour.
  5. Leave on a wire rack to cool down.

Almond Flowers

Almonds have lots of health benefits. I read several articles recently about the benefits of almonds. It seems that they are good for the brain, regulates the cholesterol levels, strengthen the immune system as well as regulating the blood pressure. Thats some of them.

I have one almond tree in my backyard. After the first year it gave so many but never got the chance to eat as cockatoos were eating them. I tried covering the tree with nets.  One day a cockatoo has cut the net to go in. After I offered the tree to them.

You can use almonds for lots of sweets. These beautiful cookies are very nice and crunchy. store them in an air tight container.

Ingredients

  • 200g Plain flour
  • Vanilla/ a few drops
  • 1 Tsp Baking powder
  • 125g chilled butter chopped
  • 1 Tsp Vanilla
  • 1 Egg
  • 75g Sugar
  • 100g Almonds
  • 1Tblsp milk if needed.

Method

  1. Add the flour, chopped chilled butter, Vanilla, Baking Powder and the egg in to the mixing bowl.
  2. Mix it until it combines.
  3. Put it in fridge for 30 min.
  4. Take out and roll to 1 -2 cm thickness.
  5. Cut to any shape.
  6. Egg wash.
  7. Dip in or sprinkle almonds.
  8. Bake on 180c for 10-15min.

 

Russian Style Meat and Vegetable Buns

Ingredients

For the Dough

  • 550g bread flour
  • 1tsp salt
  • 7g yeast
  • 20g Sugar
  • 250ml Milk
  • 2 Tblsp Margarine or butter

For the Filling

  • 1 can beans
  • beef
  • Carrot
  • Leeks
  • Potato
  • Salt & pepper
  • Any spice to your choice
  • Oil for stir frying

Method

  1. Add bread flour, salt, yeast, sugar, Margarine and mix well.
  2. Next add milk little by little and knead the dough until it becomes smooth.
  3. Grease a bowl and put the dough in & leave to double in size.
  4. Meanwhile make the filling.
  5. Stir fry beef with vegetables and add any spice to your choice. Leave to cool down.
  6. When the dough is doubled punch down and cut accordingly.
  7. Put the filling in the middle as directed in video and leave to double in size.
  8. Brush the tops with eggs and bake on 180c about 20-30 min or until golden brown on top.
  9. Cool on a wire rack.

Pancakes with a Sweet Coconut filling/???? ????

Pancakes are easy to make and saves time. When you want a quick snack or to treat an unexpected guest Sri Lankans make these in 10 min to offer with a cup of Ceylon tea. The cooked fresh coconut in treacle gives this a juicy and pungent flavour unique to Sri Lanka.

Sri Lanka has an abundant supply of coconut. I still can remember my childhood. We had coconut plants around my house and when we want fresh coconuts we plucked some with out a problem. We got treated with these beautiful pancakes more often and this is something I love to eat.

You can use brown sugar instead of the treacle.But treacle is the best. It gives the nice colour to the filling and the sweet pungent flavour. Cardamon gives the aroma and when all added thats the beautiful treat you can ever get to accompany a Sri Lankan grown cup of tea.

For the pancakes

  • 300g Plain Flour
  • 2 Eggs
  • 350ml Milk
  • Pinch of Turmeric Powder
  • Pinch Cardamon Powder
  • Enough Salt

For the Filling

  • 21/2 half cups fresh coconut
  • 11/2 Cups Treacle (Kithul Palm or Coconut Palm)
  • Pinch Cardamon Powder
  • Vanilla

Method

  1. Make the pancake batter adding flour , turmeric, cardamon,  salt, eggs and milk.
  2. The batter has to be thin. leave rest.
  3. Make the pancake filling by adding treacle in to the coconut.Cook until the liquids evaporate.
  4. Make the pancakes by adding a spoon of batter and turning the pan.
  5. Take out when ready to remove. Put the Filling and roll folding ends.
  6. Enjoy with a coffee.

Home Made Chicken Bread

Chicken bread is a very famous bread in Asia. The filling can be done in different ways. This filling is just an idea for you to follow. This is very simple to do. You can halve this recipe for a smaller batch.

I normally make a bigger batch and use in fridge for several days and freeze to take out when I want. when you freeze them make sure to thaw before. The other thing is it is best heated in oven to get the nice bread back to live.

Kneading is the most important part in baking. When you knead well it becomes more pliable to work as well as it improves the texture. If you are kneading by hand make sure to knead continuously more than 10 min to get this texture.

Ingredients

  • 750g Bread flour
  • 60g Margarine
  • 10g Yeast
  • 30g Sugar
  • 8g Salt
  • 2 Eggs
  • 370ml Water

Filling Ingredients

  • Boiled and shredded 3 Chicken Breasts
  • Salt & Pepper
  • 1/2 Bunch  Parsley chopped
  • 1/4 cup Milk
  • Several cloves garlic chopped or 1 tsp garlic powder
  • Green Chillies (Optional)
  • 2 Tblsp Plain flour
  • 2 Tblsp Oil

Method

  • Add the bread flour, yeast, sugar salt, eggs and margarine in to a mixing bowl and mix well.
  • Then add the water little by little and make a smooth dough.
  • Leave in a greased bowl to double in size.
  • Meanwhile make the filling.
  • Add oil in to a pan and fry onion and garlic.
  • Next add chopped parsley, salt and pepper. Cook 1 minute.
  • Add flour and cook again stirring continuously.
  • Next add milk and cook well.
  • After add chicken and cook until dry.
  • Take the dough and cut according to the size you wish.
  • Then roll and put the stuffing.
  • Make as directed in video and leave to double in size.
  • Then brush the top with eggs and bake on 180c about 30  min or until golden brown on top.
  • Cool on a wire rack before storing.

Apple Strudel from scratch

If you love baking and experimenting different types of dough try this strudel dough. You need to roll it to very thin pastry which will become very flaky and crusty after baking. This dough is very pliable . You can use it for savoury dishes too.

This dough has no yeast. If you do this dough and try this recipe you will never go for shop bought pastries.

Ingredients

For the strudel dough

  • 375g All purpose flour
  • 185 ml Luke warm water
  • 1/2 Tsp Salt
  • 1/4 cup olive oil
  • 1 Tsp vinegar

For the Filling

  • 4 large Apples peeled & sliced
  • Juice of half a lemon for stop browning apples
  • 1 Tsp Cinnamon powder
  • 100g Sultana
  • 50g Sugar
  • 50g Corn Starch/potato Starch/bread Crumbs

Method

  1. Peel and slice the apples . Add lemon juice to stop browning.
  2. Add all the other ingredients and mix well. Leave aside.
  3. Add bread flour olive oil , vinegar, salt with water mix and knead several minutes.
  4. Leave 10 minutes to rest.
  5.  Roll the dough to a rectangular shape as shown in the video.
  6. Sprinkle the mixed apples and roll from one end to the other.
  7. Brush some butter and bake on 180c until golden brown on top.
  8. Sprinkle some icing sugar when cool.
  9. Serve with cream and ice cream.
