Naaran Kavum /Pol kavum (Sweet coconut balls)

In some parts of Sri Lanka Pol kavum or the Naran Kavum are very famous during the new year. Coconut is common in every part of Sri Lanka and people love to eat any thing infused or mixed with coconut.
I read an article about the values of coconut. Its amazing to know every detail about consuming coconut and how it keep the people away from dementia.
The shape of the mandarine, gave these sweet treats the name naran kavum.Naran is the name in Sinhala language for Mandarines.

Making these beautiful little balls take no time at all. If you are not sure about making other sweets you can make these with out any practice at all. Coconut and the treacle is the main ingredient in these sweets.If you are using fresh coconut you need to cook it until no liquid remaining at all to keep it longer. The treacle will absorb in to the coconut and will make it brownish in colour giving a different look.

So fry them in the batter until golden brown and after cooling down store in air tight containers.

Ingredients

  • 1/4 Cup water ( will need more for the batter)
  • 1/2 Cup freshly grated coconut
  • 100g Rice Flour ( will need more for the batter)
  • 100g Brown Sugar
  • Crushed cardamon Seeds
  • Turmeric powder
  • Salt.

Method.

  • Into a pot add sugar, cardamon, and water and cook several minutes.
  • Add the coconut cook several minutes.
  • Add rice flour little by little until it forms a nice smooth paste.
  • Transfer it a bowl and leave it to cool down.
  • Make the batter adding, water to the remaining rice flour and turmeric powder.
  • Make balls out of the coconut. And dip in batter.
  • Deep fry it until golden brown.
  • Cool on paper towels before storing.

Stir Fried Onions Sri Lankan Style

Caramelised onions can be done in different ways. This is my method. I like spicy taste than sweet taste. Some like it sweet and others like it in both ways. My grand mother and my mum used to cook in this way. So I am used to do it in this way too.

In Sri Lankan spicy cooking you can adjust the spices as you wish. If you like very spicy you can add more chillies . If not can adjust the levels of spices to your taste. I still can remember some of the incidents when I started cooking first with my grandmother. She told me to cook one day. I started doing lunch for my family. The meal went all upside down with lots of spices that any one couldn’t eat. Lots of salt and it was so bad which I was unable to eat too. So I had lots of failures before I achieved the success.

I used the red onions instead of the white cooking onions. Thats nice too. Most of the Sri Lankans use red  onions than white as they were used to it for a long time. Adding coconut oil makes it more tasty and unique to Sri Lanka. The aromas of all spices when frying in coconut oil releases the aroma all over the house. b When we were kids I can remember we had home made coconut oil. The best coconut oil ever.  Its really hard to find the very best coconut oil  these days. I uploaded a recipe video  how to make seeni sambal paan (Stir fried onion bread). Ingredients

  • 4 Onions finely sliced
  • Green chillies
  • Curry leaves
  • Pandan leaves
  • Cinnamon
  • 1 Tbsp. chilli powder
  • Pinch of turmeric powder
  • Cardamom  powder
  • 1/2 Tsp pepper
  • Salt
  • Sugar
  • 1/2 Cup Maldive fish flakes
  • Tamarind juice (optional)
  • 2 Tbsp. coconut oil.

Method

  1. In to a pot add coconut oil .
  2. When the oil is hot add curry leaves cinnamon, Pandan  (Rampe) chillies, Maldive fish flakes. Fry and add all the spices with salt.
  3. Next add onions and stir fry on a very low heat about 30 min.
  4. Leave to cool down.

Sri Lankan Style Stir Fried Onion Buns

In Sri Lanka  there are different types of  savoury breads and rolls. This is one of them. I find buying bread in Sri Lanka is very expensive as they import wheat flour. So all the taxes and labour costs add in to it. When you buy a kilo of flour you can make more than 25 buns for a very low cost. When you buy the bun I think you can buy only 2 of them. My son loved these buns when he was in Sri Lanka. Still he loves them. So I make several batches for him always. When they were little I used to buy them these buns from the bred man who visits from house to house early in the morning.Still it is very common in many parts of Sri Lanka.

Ingredients

  • 600g Bread Flour
  • 1tsp Salt
  • 12g Yeast
  • 300ml Water
  • 2 Eggs
  • 2TSp Sugar
  • 40g Coconut oil

Method

  1. Add the bread flour, salt, yeast, coconut oil,  & Sugar  into a mixing bowl.
  2. Start mixing and add the eggs.
  3. After add water little by little and start kneading about 15-20 minutes.
  4.  Leave the dough in a warm place to double in size.
  5. When the dough is doubled in size take it on to the bench and ad some flour knead again and cut in to equal size pieces.
  6. Roll each piece to an oval shape.
  7. Put the Onion Mix in the middle and press ends. Seal well and turn.
  8. Next shape well and leave to double in size.
  9. After brush the tops with eggs.
  10. Bake on 180C about 20 minutes or until golden brown on top.
  11. Cool on a wire rack before storing.

How to Make Falooda (????? )

Falooda is one of the most beautiful drink that you can find almost every restaurant in Sri Lanka. Almost every day is a warm day there and falooda has a good market every day. Not only that its very popular in India and some several other countries.The unique taste to its own, make this drink a real time favourite to any one. The colour of the drink is very attractive too. Not only it helps stop the thirst it can stop your hunger too.

I have uploaded a recipe about royal falooda too. Its not only a drink its a dessert  too..There is a little bit of difference in these too drinks. if you cant find the Basil seeds or the casa casa seeds try to find chia. Chia is very popular these days and easy to find all around the world.

Instead of milk you can always use the condensed milk. The only thing is will be a bit more sweeter then. If you like more colour you can colour the vermicelli too.

When making the rose syrup or the sherbet syrup make sure to taste it as the rose essence is very strong than the rose water.

Try making your own falooda at home. I am sure that you will be thinking of  making it again and again after.

How to Make the rose syrup/Sherbet Syrup

  • 100g sugar
  • 1 cup water
  • 1tsp rose essence
  • 2 Tblsp rose water
  • Pink Food colouring

Method

  • Boil water with sugar and rose essence and then add colouring. Simmer for 5 minutes and store in fridge.
  • Prepare everything and leave in fridge to chill.
  • Take a tall glass and add Milk.
  • Add sherbet syrup, vermicelli and jelly.
  • After add basil or chia seeds, & Finish with a scoop of ice cream.

Sri Lankan Style Dried Fish Curry

Dried fish are available in all markets or grocery shops around Sri Lanka. There are so many varieties of dried fish. Salt is the preserving agent here. So it is full of salt. You need to soak the dried fish   in water to take the excess salt out. Once you cook into a curry without adding salt, it meets the salty taste. Adding tomatoes gives a nice colour, sourness and a bit of sweetness to the curry too. Instead of tomatoes you can always add tamarind or goraka Garcinia cambodia) into the curry.

Cooking with coconut milk itself make the dried fish absorb all the flavours through and also makes the curry really nice and thick. It gives a bit of creaminess as well as the oil from the coconut and gives a nice colour and look to the curry.

Cooking styles are different from person to person in Sri Lanka. It is how it evolves from generation to Generation. We never followed written recipes. Always how you were taught and what you learned from your mom and grand mom  carried to the next generation. One reason of creating my channel is to share the knowledge and to give the correct recipes to  the whole world.

Ingredients………

  • 150g Dried fish (Katta, Thora, etc….)
  • Several curry leaves
  • Pandan leaves or rampe
  • 1 tsp Fenugreek seeds
  • 2 Inches cinnamon
  • several cloves garlic
  • 3 Tomatoes sliced
  • Several shallots sliced
  • Green chillies
  • 1/2 Tsp Chilli Powder
  • Pinch Turmeric Powder
  • 1/2 tsp curry powder
  • 2 cups thick coconut Milk
  • Salt if needed only

Method

  1. Soak the dried fish in water for an hour or wash with hot water to take the excess salt out.
  2. Add the dried fish in to a pot with coconut milk.
  3. Add all the other spices too.
  4. Cook on low medium heat until the dried fish cook and the gravy is thick.
  5. Check the salt level . Add if needed.
  6. Serve with plain rice.

Sri Lankan Boiled Bitter gourd Curry

karawila or bitter gourd is a very common vegetable in Asian countries. According to the Aurvedic medicine it has lots of health benefits. When we were kids we didn’t like the bitter taste at all. But after getting to know the value we started eating it. There are several types of bitter gourd. Dark green, small, and long ones. You can cook it in to a curry in different ways as well as can eat raw as a salad. The most tastier one is the fried salad .

Bitter melon juice benefits include helping to overcome type 2 diabetes.Bitter melon is very low in calories, carrying just 17 calories per 100 g.It is high in vitamin C too. To introduce bitter melon to us my mum used to tell about how you can improve health and skin conditions after eating bitter melon/gourd. So we used to swallow them with out biting to get the results. When I remember those days still I can laugh.

Ingredients

  • 1-2 Bitter gourds
  • Goraka (Garcinia Cambodia)
  • Garlic (Several Cloves)
  • 1 Onion finely chopped
  • Several Chillies sliced
  • 1/2 Tsp Fenugreek seeds
  • 1/2 Tsp turmeric Powder
  • 1 Tsp raw curry powder
  • 1 Tblsp Maldive fish flakes
  • curry leaves
  • Salt
  • Pandan Leaves
  • 1 Cup Coconut milk
  • Oil (1-2 Tblsp)

Method

  1. Add the bitter gourd in to a pot  and pour water to cover .
  2. Add salt and goraka in to that and boil until well cooked.
  3. Take out and leave to cool down. Later cut in length ways.
  4. Into  a pot add some oil add mustard seeds, fenugreek seeds, curry leaves, pandan leaves, onion garlic, and Maldive fish flakes. Cook until it releases the aroma.
  5. Next add the spices to roast in the oil.
  6. After add coconut oil. Bring to the boil. Add tomato goraka or tamarind to get more sourness.
  7. Add the cut bitter gourd and cook until the gravy is thick.
  8. Serve hot with plain rice.

Helapa (Sweetened & Steamed Mixed flours with Coconut )/????

Helapa is one of the Sri Lankan delicacy that you will find in any where in Sri Lanka. Its made of pure treacle , rice and Kurakkan (Ragi, or finger millet) flour and with freshly grated coconut. But  nothing is better  like the home made ones with lots of love.

I go to my childhood memories all the time I make these beauties. when we were  kids we were asked to find the leaves to make them. To hear that my granny is making them is something that we get over thrilled.  The rule is need to pick the same size leaves . Then we have wash and try them. So after we anxiously wait for the steaming hot halapa. My mum is very old now but she still make them for us when we go there.

I grew up in Galle. Some they make the halapa with coconut and treacle mix in the middle. They mix flour separately and then fill with sweet coconut filling in the middle. I like that way too. The way I made is simple and easy. It saves time too. If you want to make the sweet coconut mix  try my Pancake with a sweet coconut filling . (There I describe how to make the filling.

The way of making these is someones choice. You can make them with kurakkan flour only or can several flours together as I did. The taste is better when you add several flours in to that.

Make sure to steam them until they are well cooked to get the taste and also to keep longer. I had these I made around a week out side in an air tight container. Nothing is better than a halapa with a nice cup of Ceylon tea.

Ingredients

  • 1 cup Rice flour
  • 1 Cup Kurakkan (Ragi) flour
  • 1 Cup White rice flour
  • 1/2 Cup Plain Flour
  • 500g Fresh Coconut
  • Pinch of Salt
  • 1/2 Tsp Cardamon powder
  • Enough treacle to bring the mix together

Method

  1. Add all the flours with salt and cardamon powder.
  2. Next add enough  treacle to mix all together.
  3. Make balls and press in to the leaves.
  4. Stack the nicely on a steaming tray and steam them for 10-15 min.
  5. Cool completely on a wire rack.
  6. Store in an air tight container.

Sri Lankan Fish Buns (Maalu Paan) ( Updated Recipe)

Fish Buns are available all over Sri Lanka. Its a snack any one will grab for breakfast lunch or dinner. Its a very common snack you will find from a street vendor to a 5 star hotel. Mainly a soft dough filled with a mixture of spicy mashed potatoes, fish with tempered onion green chillies, and curry leaves. To get the aroma they add cinnamon, pepper garlic , red chillies and Sri Lankan un roasted curry powder.. Get the recipe from that link.

Ingredients for the recipe………

  • 500g Bread flour
  • 200-250ml  warm water
  • 2 Eggs
  • 8g Yeast
  • 60g Butter
  • 25g Sugar
  • Pinch of salt

Filling Ingredients

  • 1 Can Mackerel
  • 250g Mashed potatoes
  • 1 onion
  • Green chillies
  • Curry leaves
  • Garlic
  • Oil for stir frying
  • Turmeric powder
  • Chilli Powder
  • Pepper
  • Curry Powder
  • Salt

1 Egg + 1 tblsp water for brush the top of the buns.

Method

  • Preheat oven to 180c.
  • Grease a large tray.
  • Add  the yeast, Sugar with half of the warm water and leave to activate.
  • Add flour, salt, eggs, yeast mix,  and then add water little by little and make a smooth dough.
  • Kneading should be 15-20 min on speed 2.
  • Leave the dough in a warm place to double in size.
  • Meanwhile make the  filling
  • Add oil or margarine to a pot.
  • Add garlic, onion , chilli and curry leaves. Fry and add spices, fish and potatoes.
  • Add salt to your taste.
  • Cook until there is no liquid.
  • Leave to cool down.
  • When the dough is doubled in size punch down.
  • Put the dough on to the bench. Flour your hands and knead several minutes.
  • Next cut the dough according to the size you wish.Make balls and leave 10 min on the bench to rest covering with a damp cloth.
  • After take the dough ball and make a circle.
  • Put the filling in to the middle.
  • Cover as shown in the above video.
  • Leave on a tray to rest again.
  • When the buns are double in size, Brush with eggs.
  • Bake 20-30 min.
  • leave on a wire rack to cool.
  • Serve with tomato sauce.
