Stir Fried Vegetable with Noodles

If I say most of my week day meals are one pot meals that’s true. I always try to cook all in one to save my time and give my family some healthy meals every day. Making several things after work is difficult as well as taking a lot of time. When you add all together makes it more tastier too.

I always add lots of veggies in my cooking. It always gives an appealing look as well as the taste. I freeze the left overs for another day or for kids to use when they are hungry.

This recipe will serve 8 people.

I used 500 g of noodles. Even you can use angel hair pasta. I used a can of chick peas, a cup of cabbage, 1 red capsicum, 1 leek, and a large carrot for vegetables. Make sure to cut them thinly.

Put a pot of water with salt in it and bring to boil and add the noodles and cook accordingly to the packet instructions. For the spices I used a teaspoon full cumin and coriander powders, salt and pepper and a 1/2 teaspoon full paprika powder.

Other than that I used one onion with few cloves of garlic finely sliced, several curry leaves, 2 table spoons tomato sauce with a 2 table spoon soy sauce and a table spoon full Chinese cooking wine. Add some oil in to a pan. When the oil is hot add all the onions garlic and curry leaves in to the hot oil and stir fry until the onions are translucent.

After add the vegetables and stir fry well.

Next add the spice powders and stir well.

Add the soy sauce, tomato sauce and the coking wine.

Mix well and serve hot.

Barley Pilaf with chicken and Vegetables

Barley pilaf is a well balanced hot meal for a cold winter. If you soak the barley before hand its so simple and easy to cook.  If not it will take too long to cook. Meanwhile cook the chicken and prepare the other ingredients.

You can prepare the ingredients the day before and assemble everything together when you need. I always prepare the veggies and get ready for the busy week nights.

I used 250 g Barley for this recipe. Add some water to the barley and leave it to soak. After wash and drain all the water and add some water to cook the barley.

Cook 250g chicken after seasoning with salt and pepper in a bit of oil .

After stir frying the chicken leave aside and prepare the ingredients for stir frying. I use done medium size carrot,, one white part of the leek, about 1 cup of cabbage and several leaves of kale or any veggie to add green to the pilaf.

Cut some onion , garlic and some ginger. Add some oil in to the pan and fry until translucent.

Add the prepared vegetables and some spices to your taste & stir fry well.

After stir frying about one minute add the chicken and barley on to it and stir fry well.

Vegetable & Prawn Stir Fry

If you are busy person and still want to serve your family a nice nutritious meal this is just an idea. You can always change the vegetable  according to the taste.  This serves an easy simple dinner .

This recipe will serve 4 people.I used the white part of one leek, 2 medium size carrots, 1/2 bunch Kale, and some cabbage.

I used 500g peeled prawns. You can use the amount  you wish.

Put a pot on the stove and stir fry onions, garlic and some curry leaves or any other herb as you wish.

After add prawns and stir fry until the colour changes.

In to that I added 1/4 tsp chillie flakes, 1/2 tsp coriander powder , 1/4 tsp cumin powder and pepper.

Add the spices on to the prawns and stir fry well.

After it will look like this. Do not stir fry the prawns as it can go rubbery if over cooked.

Serve on rice ,  quinoa., or couscous.

Stir fried Chicken and vegetable Quinoa

Quinoa is gluten free superfood that you can use instead of rice. Replacing quinoa instead of starchy products will give you lots of proteins as well as a lot of minerals and vitamins. Its very famous for its omega 3 fatty acid levels too. quinoa is also a very good source of calcium, magnesium and manganese.

Cooked quinoa seeds become fluffy and creamy, slightly  crunchy. It has a delicate and  nutty in  flavour, Its good for salads side dishes or even making snacks. I want to show the right way of cooking quinoa with a bit of flavour as cooked in restaurants. When you add flavour it can be eaten with anything too.

This will give you an idea on how to use as a main meal and also how to freeze quinoa.

When you buy Quinoa make sure to buy organic quinoa. There are 3 types.white , black or mixer of black and white. If you are doing this for a salad black and white the best. I always buy the organic quinoa.

Cook the quinoa according to the packet instructions.

Cook 250g Chicken as you like. You can use boiled or stir fried or even left overs from the roast.

Prepare some vegetables. Grate some carrots, cut some red and green capsicumsonions celery and some leeks with some garlic.

Add some oil in to a pan.

Add the garlic in to the oil.

Add the onion and celery in to the pan. Fry several minutes.

Stir fry well.Add enough salt to your taste.

Add any spice as you wish. I added 1/2 tsp corriander and cumin powder.

After add the chicken. Stir fry but make sure not to over cook the vegetables.

If you cook extra freeze them in individual containers for future use.

Quinoa stir fry with vegetables and chicken

quinoa is a superfood. It is gluten free . It is a high protein vegetable that is becoming very famous all over the world. Some replace rice with quinoa. it is high in omega 3 and lots of other nutrition & 9 different types of amino acids.

When you cook quinoa make sure you to wash well. I  normally do several times. After add stock or water. I find when you add stock water it tastes beautiful. It’s alright with water with a bit of butter. Anyway that’s my personal choice. Always add 11/2 cups of water for each cup of water.So it cooks light and fluffy. I  bring the quinoa to boil on high heat and then I reduce the heat to low cover and cook for fifteen to twenty minutes.

when I have time I always extra quinoa and leave in fridge for several days.  So you can quickly assemble the cooked quinoa as a salad when you are busy or can make quinoa omelette or even patties. I have done some videos and I will link them. You can cook a big amount of this dish and freeze in individual containers for future use. This recipe is really good for freezing.

Ingredients

  • 3 small cups quinoa
  • 41/2 water or stock water
  • Butter or olive oil
  • 250g Chicken tenderloins (Optional)
  • 1 Yellow and red capsicum
  • 1 carrot
  • 100g Beans
  • 1/2 cup purple cabbage
  • 1tsp coriander powder
  • 1/2 Tsp cumin powder
  • 1 large onion chopped
  • Several cloves of garlic chopped
  • Several chilies sliced (Optional)
  • Olive oil or butter for stir frying
  • Salt and pepper

Method

  1. Wash quinoa thoroughly and cook it until light and fluffy. (Please read the description on top)
  2. Use a fork to fluff the quinoa.
  3. Cut the Vegetables and prepare all the other ingredients.
  4. Add oil in to a pot or a pan.
  5. When the oil is hot add the onions, garlic and chillies .
  6. Fry until the onions are translucent.
  7. Next add the hard vegies and cook about a minute. Do not over cook the vegetables.
  8. Next  add all the other ingredients and the cooked quinoa and stir fry well.
  9. Serve hot with a chutney or pickle or as it is.

Stir Fried Onions Sri Lankan Style

Caramelised onions can be done in different ways. This is my method. I like spicy taste than sweet taste. Some like it sweet and others like it in both ways. My grand mother and my mum used to cook in this way. So I am used to do it in this way too.

In Sri Lankan spicy cooking you can adjust the spices as you wish. If you like very spicy you can add more chillies . If not can adjust the levels of spices to your taste. I still can remember some of the incidents when I started cooking first with my grandmother. She told me to cook one day. I started doing lunch for my family. The meal went all upside down with lots of spices that any one couldn’t eat. Lots of salt and it was so bad which I was unable to eat too. So I had lots of failures before I achieved the success.

I used the red onions instead of the white cooking onions. Thats nice too. Most of the Sri Lankans use red  onions than white as they were used to it for a long time. Adding coconut oil makes it more tasty and unique to Sri Lanka. The aromas of all spices when frying in coconut oil releases the aroma all over the house. b When we were kids I can remember we had home made coconut oil. The best coconut oil ever.  Its really hard to find the very best coconut oil  these days. I uploaded a recipe video  how to make seeni sambal paan (Stir fried onion bread). Ingredients

  • 4 Onions finely sliced
  • Green chillies
  • Curry leaves
  • Pandan leaves
  • Cinnamon
  • 1 Tbsp. chilli powder
  • Pinch of turmeric powder
  • Cardamom  powder
  • 1/2 Tsp pepper
  • Salt
  • Sugar
  • 1/2 Cup Maldive fish flakes
  • Tamarind juice (optional)
  • 2 Tbsp. coconut oil.

Method

  1. In to a pot add coconut oil .
  2. When the oil is hot add curry leaves cinnamon, Pandan  (Rampe) chillies, Maldive fish flakes. Fry and add all the spices with salt.
  3. Next add onions and stir fry on a very low heat about 30 min.
  4. Leave to cool down.
