Thai Egg Plant with Potatoes/ / Thalanabatu , Ala Curry

Thalanabatu believed to be a good medicine too. It can be cooked in many ways. So simple and easy. I have uploaded several ways of cooking Thalanabatu in different ways. This is a another way of cooking Thalanabatu. If you are living overseas its available in freezer in Indian shops too.

This will serve 4-6 people. Clean several potatoes , and take some onions, Chilli , garlic, Thalanabatu , 1/4 tsp turmeric powder, 3/4 tsp curry powder, 1/4 tsp chilli powder, 1 tsp Maldive fish flakes, several curry leaves, cinnamon, salt . and fenugreek seeds.

Chop the potatoes onion, and onions with chillies and garlic. Add in to a pot  and add about a cup of water.

Add all the spices except the Thai eggplants and cook until the potatoes are slightly cooked. (This will take 5 minutes)  After add the eggplants and cook another 5 minutes.

After add the coconut milk and cook a further 2 minutes and finish off. Serve with rice.
