Ulundu Vadai/ Black Gram vadai This recipe will serve four people . Wash throughly and soak 250g Black gram lentils or Undu Parippu) I normally soak overnight. Make sure to drain the m really well. If not the mixture will be soggy. Prepare these ingredients when you are ready to make them. Enough salt, finely sliced curry leaves, several chillies finely sliced, and some onions finely sliced. Add the soaked seeds to a food processor. Grind them in to a fine paste. After grinding it should look like this. take out to a bowl. Add the prepared spices and herbs. Mix really well. leave it covered about 1/2 an hour. Take a table spoon full of the mixture and make balls. (Always depend on how big you want your vada to be) Press the prepared balls using the other palm. Put it on your palm Press using the thumb or the index finger. Add the prepared vada in to the hot oil. (Just slide through the palm) Deep fry until golden brown on a low heat. ( As all the ingredients are raw , cook on a low heat.) Drain on paper towels. Serve with coconut Chutney. Serve with Coconut Chutney.
